preggo's weekly dinner menu!
Thought we could share our dinner menus for the week!
We start on Saturday (since that's our supermarket day) and go until Thursday (since Friday we go out for dinner):
SAT - Rotisserie chicken with roasted broccoli (mix with olive oil & sliced garlic, bake at 450 for 20 minutes until edges start to brown, then toss with lemon & parm cheese) and sliced cucumbers
SUN - "Summer pasta" (fresh halved cherry tomatoes from the farmer's market, olive oil, garlic, fresh basil, red pepper flakes, salt & pepper... let it sit for about 4 hours so the flavors blend together - then toss with hot angel hair pasta, halved bocconcini, and fresh parm)
MON - Rotisserie chicken with yellow rice and peas
TUES - Taco salad
WED - Chicken scampi with roasted zucchini & onion
THURS - Omelet for 2 (with sharp cheddar cheese, onion, & potato) with crispy maple bacon and buttered toast
*I also made a delicious french apple tart (recipe by Ina Garten) that we scarfed down in about 5 minutes on Saturday!

I'm impressed! I don't know what we are eating until just before we are eating it! We often go to the supermarket and buy what we are making 10 minutes before we cook.

DH grilled yesterday so that means healthy dinner for the week!!! Instead of last min. fast food.
So, we are having grilled marinated chicken, grilled corn on the cob, rice with mixed veggies, and biscuits. (Only one )
Hopefully this lasts us all week!

i wish DH would eat half the things on here. he's the plainest F(**^ eater ever. no salads..doesnt like spaghetti..only eats some pastas like raviolis..
im so friggan tired of chicken & pork its not even funny. and im too tired to make dinners for both of us, never mind making 2 different dinners.
ughh..what to do with a picky eater??

I only have the next three days planned - we'll see what happens for Thursday and the weekend.
Tonight - chicken cutlets and corn/tomato/scallion salad Tuesday - BLTs, chips and grilled zucchini Wednesday - chicken potstickers, brown rice and salad
ETA I forgot what I bought for Thursday! I am making orichiette with broccoli rabe pesto (broccoli rabe, parmesan and pine nuts)

My dh does all the cooking & mixes the days up, but this is our usual menu:
- Meatloaf with a steamed veggie side - Grilled hamburgers & fries - Turkey tacos (lightly seasoned to prevent heartburn) - Chicken francese or marsala with a steamed veg - Pasta - with butter for me, but now I'm going to ask him to try Hayley's "Summer Pasta" recipe!
We also fend for ourselves 1 night a week & get take-out once a week. I'm boring, so I'll almost always get an eggplant sandwich from the pizza place or a Veggie hero from Subway...
