mexican night suggestions

what is your fav mexican dish? Besides tacos

I want to make something yummy but has to be quick and easy!!

I love enchiladas and empanadas! My enchilada recipe is very simple:

1 lb. ground beef or turkey
1 onion, diced
2 cloves of garlic, minced
2 tbsp. cumin
3 tbsp. chili powder
1/4 tsp. cayenne pepper
1 tbsp. garlic powder
1 tbsp. onion powder
1 cup black beans, drained and rinsed
1/2 cup frozen corn
1/2 cup water

1 large can plain tomato sauce
Chili powder, cayenne pepper, cumin, garlic and onion powder, salt and pepper - all to taste

8 large tortillas

3 cups shredded cheddar cheese

Sautee onion and garlic til translucent. Add meat and brown. Drain excess fat and add spice mix. Add water, then bring to a boil and reduce heat for 10 minutes. Add corn and black beans.

Combine sauce ingredients and cover bottom of baking pan with sauce. Scoop about 1/4 cup of meat mixture onto a tortilla and top with cheese. Roll and lay seam side down in pan. Repeat until all tortillas are filled.

Cover with remaining sauce and cheese. Bake at 350 for about 10 minutes, until cheese is melted.

You can easily substitute a taco seasoning packet/canned enchilada sauce too.

Fajitas: Steak or chicen strips, sautee with peppers and onions and use a pre-packaged fajita seasoning (or taco seasoning). Serve on warm tortialls w/ Salsa and sour cream

Quesadilas: Chicken strips, grilled, lay on one flat tortilla, add cheeses, black beans, cilantro, pico de gallo (just a little) and black olives. Cover with another tortiall and grill on both sides

Cerviche: Shrimp and scallops, red onion, soak in lime juice (Overnight), drain, add fresh cucumber and cilantro. (More of a side than a main meal)

Enchiladas/Buritos: Again, flat tortillas. Meat of choice. Wrap with cheese (beans for buritos) and cheese and pico or salsa. If making enciladas, bake in oven with enchilada sauce, black olives and cheese on top.

Nachos: Nacho chips, ground meat with taco seasoning, guac, salsa, jalapenos, olives, cilantro all just scattered over the top. If you ant cheese, throw that on first and melt in the oven before you add the other stuff.

Usually serve these (except nachos) with yellow rice or re-freid beans and a veggie.

Taco Salad

1 lb ground beef (or turkey)
1 bag of regular Doritos
1 head of lettuce
1 package of cherry or grape tomatoes
1 container of creamy french dressing
1 container of Russian dressing
1 package of Mexican (or taco) cheese

*Cook the beef
*Crumble the Doritos
*Cut up the lettuce
*Cut the tomatoes in half

Mix everything together. Put the dressings on just before you serve or it will be too mushy.


It is sooo delicious!!

Pollo en Pipian Verde

This is authentic mexican cuisine. It's hot & spicy but in an earthy way...not in a hot sauce and black pepper kind of way.

It's a bit involved and the tomatillos are often hard to find unless you go to an ethnic grocery. BUT when I make this it is SPECIAL and a real treat in my home. My husband and I love this.

I recently made sopapilla cheesecake for dessert and it was easy and amazing. It's like a churro / cheesecake hybrid.

My best friend is Mexican! LOVE going to her grandmother's to eat!

My fave is her meatball soup...Albondigas soup and pork carnitas.

Dessert = tres leches cake...yummmmm
