I eat carbs, and could never eliminate them, but try to eat them in moderation (so if I have a sandwich for lunch, I will not have a carb with dinner, or if I know I am having pasta for dinner, I try to cut out carbs from breakfast and lunch). I think the key is to bulk up your meals with fruits and veggies when you remove (or cut down on) the carbs.
I do like eggs, but if you don't eat eggs, I think the biggest challenge would be breakfast. I assume you are trying to cut out even whole grains, like oats? If so, you could do things like yogurt (or cottage cheese or part-skim ricotta) and fruit, smoothies, a cheese plate and fruit. Maybe a yogurt parfait with fruit and some type of nut to up the protein?
I bet if you searched for low carb or no carb breakfast ideas on Pinterest, you would get some interesting recipes. My friend told me she recently made pancakes with greek yogurt, a mashed banana, and I think an egg or egg white (and maybe protein powder). So -- not sure if the egg issue for you is an allergy or if it's just that you don't like to eat them plain. But if you could use an egg in a recipe, like as a binder, you might find low or no carb alternatives to traditional breakfast items like pancakes.
Lunches I do a lot of salads (not just lettuce based -- can do other types of veggies as a base, beans, etc.) often with some type of protein (tuna, leftover cooked chicken), or soups in the winter.
Dinner you could always do a piece of meat, chicken, or fish, prepared however you want, with a ton of veggies. In the summer, we do a lot of grilling, but in the winter, you can do stews and chilis and that type of thing.
Snacks: String cheese, yogurt, fruit with peanut butter (or just a piece of fruit or fruit salad), veggies with salsa, almonds, smoothies, turkey or some other lean deli meat rolled in lettuce (with mustard, etc.) or rolled with thin sliced cheese.

Hemp and Chia seed puddings
Eggs
Baked goods with almond flour
Spaghetti Squash
Butternut Squash
Greek Yogurt and Kefir
Cauliflower mashed potatoes and pizza crust
