Cooked chicken as a recipe ingredient?

This may be a really dumb question but I really don't know.

When a recipe calls for "cooked chicken" they don't say how to cook it.

What do you do? Buy it cooked? Bake it? Boil it? Grill it?
And what kind of chicken? Bone in or cutlets?

Really makes a recipe seem easier than it is when they leave this part out.

When a recipe calls for that, you could use leftover cooked chicken, or buy a rotisserie chicken from the store. Or if you don't want to use either of those you could just cook up a few chicken cutlets and season them however you'd like.

Great idea with the rotisserie chicken. I would like to cook them myself though most, but how?

I usually use diced chicken breasts that I boil in seasoned water.

I usually use boneless, skinless chicken breasts and boil them in chicken stock until done, cool and either shred or dice.

Sometimes I throw chicken breasts in the slow cooker with water or chicken broth (and some seasonings, if desired --- garlic powder, etc.). I cook them in the slow cooker and then shred them to use in wraps, salads, tacos, quesadillas, or recipes calling for cooked chicken.

And if you have a Kitchen Aid stand mixer, the easiest way to shred cooked chicken is just to put it in the mixing bowl with the paddle mixer (that's the regular attachment, not the whisk) and turn it on for a few seconds. It quickly and easily shreds the chicken... so much easier than the "2-fork method" or cutting it up.

I also use my Kitchenaid to mix meatballs/meatloaf and also mashed potatoes!

I usually season boneless, skinless chicken breasts then brown them in my cast iron pan for a few minutes on each side. I throw the whole pan in the oven for about 25 min until the chicken cooks through. Very easy. Chat Icon

Thanks everyone! Boiled chicken is rather bland, but I never thought to use chicken stock to give it flavor.

Most of the recipes I am looking at that call for cooked chicken are wraps/quesadilla/nacho type foods.

You can also shread poached (boiled) chicken using 2 forks. This is what I do for taco/burrito/quesadilla type recipes.

I've even used beer to boil chicken and give it flavor. You could do half beer/half chicken broth. You could also add some garlic and onions with it to bump up the flavor too.
