2 Bedroom Apartment Wanted-Nassau County
I don't foresee her getting $1500 for all inclusive for 2 bedrooms - you'd be lucky to find that for 1 bedroom in those areas. Has she checked in Baldwin, Valley Stream or Lynbrook? Those areas she *might* be able to find something in that price range.

I agree. Before DH and I bought our house we rented a 1BR in Merrick (heat, electricity, water included) for $1600/month. We paid our own cable/internet/phone. It was a large 1BR, but a 1BR nonetheless.

2 Bedroom Apartment Wanted-Nassau County
We were in a 1 br in the Hewlett/Woodmere area, heat & water were included, we paid our own elec & cable/etc... we were paying $1450/month in a CRAPPY building (it seemed nice at first, then was sold about 2 months after we moved in). this was large too, I guess more like a 1br jr.

Last time I rented (and this was in 2007), DH and I paid $1550 for a 1-bedroom in Nassau.

Honestly, I don't want to discourage you but I do housing location for people who are elderly and disabled who qualify for a subsidy and I tell them straight up that we do not place people in Nassau because we are priced out of the market. Even HEMPSTEAD can be over fair market rent.
Also Western Suffolk has gotten to be really tough.
I'm lucky to have a contact in a senior building in CI who sometimes has under-55 housing for a person with a documented disability, that is fair market.
And I'm still talking about 1-bedrooms that are quoted for less than what you originally asked for the 2-bedroom.
Maybe moving in with another single mom who owns a home but is having difficulty paying the mortgage could be an option?
