London Broil
I made this last night and it although the flavor was amazing from marinating it, and I cooked it to a perfect med-rare, it was still tough. There is a lot leftover. What can I do with the leftovers to make it not so tough?

Hmm... did you slice it super-thin and against the grain? That is usually the key.
If your leftovers are not already sliced up (I usually try to just slice what I need for dinner and leave the rest whole so it doesn't dry out), then get a really sharp knife and try to cut it as thin as possible and make sure you are going against the grain (lines on the meat). I love leftover London broil on sandwiches and on salads.
If it's all sliced up and how it was cut isn't an issue, I think the only thing you can do to make it less tough is chop it up pretty fine. Maybe you can then repurpose it in some kind of beef pot pie/shepherd's pie dish?
