Buying meat for the week
When you come home after food shopping, do you put the meat in the freezer or the fridge? How many days can it be in the fridge without freezing it? I usually put everything in the freezer and then I forget to defrost the night before so I end up buying something new that day.

I always go by the date on the package. If I'm going to use it by the sell by date I keep it in the fridge. Otherwise it goes in the freezer.
I read recently that you should only keep meat in your fridge for two days bc you can't rely on the temp there versus a commercial fridge. I think I worried about it for a day or two before figuring I've done the same thing for years and never had an issue. I'd rather keep it in the fridge then have to freeze and defrost everything.

I buy meat in bulk at BJs or stock up when it's on sale at the supermarket. I portion it out, vacuum seal it, and freeze. It lasts forever when you vacuum seal it. I usually defrost it the day I need it. Just put your meat into a bowl of cold water, change the water every so often, and it will defrost in no time.

I buy my meat from a butcher and it goes right in the freezer. I meal plan for the week so I take out the meat the night before and put it in the fridge to defrost.

How do you do this though? Sealed in plastic then in cold water? I used to do this but I would put the chicken directly into the water (not in plastic) then I read that bacteria can set in when left at room temp, so I stopped.

Depends on the meat and the brand. There is a more natural (don't think it's officially organic, but it's free range) chicken (not perdue) that has a sell-by date always later than perdue (by a few days) and I've found that it is good for a few days past that (in the fridge), by about 3-4 days, but NOT 1 week. I get it at Waldbaums.

I have done it both vacuum sealed in plastic or just straight in the water. I always leave cold water running just slightly. Between the cold water and the frozen meat it won't get to room temp so it should be fine.

I try to shop on Sunday or Monday, and buy for the week, but I try to use up the more perishable things first. So I will meal plan to use fresh meat and poultry earlier in the week and then maybe frozen shrimp and pasta later in the week. That way the fresh meat is only there for 2-3 days.
I only like to leave it in the fridge a few days, regardless of the sell by date, if it's in the supermarket packaging. If it's something like a vacuum packed pork tenderloin or a turkey breast, it can stay longer in the fridge, imo.
Fresh fish I always buy the day I am going to use it.

I have a vacuum sealer so I just take the vacuum sealed pack of meat and throw it right into the cold water. The meat is never at room temp. It's very cold right up until it's defrosted and then I throw it in the fridge until I'm ready to cook.
