Making cupcakes for favors
I want to make cupcakes for DS's bday party and I want to make them the night before. I don't want to use canned frosting. Im always leery about leaving homemade frosting out though. What frosting would you recommend? Do you think homemade buttercream is safe to leave out for more than 24 hrs.? Also any tried and true recipes? I'm thinking the cake will be a version of the Hershey's cocoa chocolate cake recipe.

Butter doesn't really need to be refridgerated. The buttercream will be fine out of the fridge overnight and for far longer than that. If you're really considered, you can use shortening as a substitute, but I don't like to do that. It's not the same flavor.
I always love Annie's Eats Vanilla Bean Buttercream recipe- it tastes like vanilla ice cream and goes sooooooo good with the Hershey's chocolate cake. The recipe calls for actual vanilla beans, which are pricey, but so worth it. You can buy it at Stop n Shop, by the spices.
