Baked shrimp scampi
I am in the process of defrosting frozen shrimp. I found a recipe for baked shrimp scampi that looks good. Do you think it would be ok for me to prep it now and get everything in the casserole dish and then put it in the fridge for a couple of hours? Then when DH gets home from work he can just pop it in the oven?

Baked shrimp scampi
If there's lemon juice in the marinade I would be worried it will start to sort of cook the shrimp while it sits. Can you mix of the marinade and prep the shrimp separately so maybe he can just toss them together and bake later?

Re: Baked shrimp scampi
I was trying to make his life easy, but I think I'm just going to have him get a pot of water boiling for the pasta and then I'll make regular shrimp scampi when I get home from work. Fortunately it doesn't take too long. I'll have dinner on the table by 7:30- not great, but not bad either. I'm just going to prep everything before hand- clean and peal the shrimp, chop the garlic, etc... Then I just have to throw it all together.

Re: Baked shrimp scampi
I would clean the shrimp and make the marinade. Then when it is time to cook, mix it and let it sit for 15 minutes out on the counter. Then back it .
