A few tips about the Baked Shrimp Feta Pasta

I made this last night: Baked Shrimp Feta Pasta

and I have a few tips.

1. I used canned tomatoes in place of fresh ones (I didn't have any) and it was delish
2. I would saute the shrimp in the sauce for a few minutes before baking. If not, it's going to take longer than the recommended 10-15 minutes for the shrimp to cook while in the orzo
3. I also doubled the recipe, so we could have leftovers. Even with doubling, there wasn't much leftover. So keep that in mind if you are making for a family of 4.

But all in all it was DELISH!!!

There were barely any leftovers!

OMG it was SO good. I am not a big shrimp person but the feta, the tomatoes, the spices... Chat Icon

Plus I had made the orzo ahead of time (for a different dish earlier this week) so it was such a quick and easy recipe. Definitely a winner!
