Anyone have a good pasta with zucchini recipe to share?
Wanted to try and make this one night this week. Either with our without a red sauce is good  TIA!

Anyone have a good pasta with zucchini recipe to share?
I cut the zucchini in half lengthwise, then cut into thick semicircles. Then, sautee a large thinly sliced onion in olive oil, then add a lot of finely chopped garlic, salt, and pepper until the garlic is soft. I then add the zucchini (4-5 small ones) and chopped fresh basil and thyme. We like a lot of basil, but it's optional. I sautee until the zucchini just starts to get soft, crank up the heat and add a cup or so of some kind of broth (I like low sodium chicken, but I've used vegetable, too- delish!) Start boiling the water for your pasta at this point.
Cover and reduce heat to low and simmer until the zucchini is softer but not mushy-cooked through.
Undercook your pasta by a minute or so.
I love it with mezzi rigatoni but penne rigate is good, too. I reserve some pasta water, drain the pasta and toss the zucchini into the pasta pot and add grated cheese and more pepper and I let that cook for 1 minute. That's it!
We serve it as a side dish for grilled pork chops or fish. It is a whole pound of pasta, but has a huge ratio of vegetables to pasta.

It wasn't bad. I added bacon (I know, so bad) and I added more zucchini. I used 14 oz of pasta and about 12 oz of zucchini (kept egg and cheese the same). I'd do it again because it was easy and quick!
