no-prep crock pot meals, please

i'll be bringing our crock pot on the road...

what are some good no-prep (as in no browinging onions and meat) crock pot recipes?

i'm hoping to dump a few items in the crockpot at the hotel in the morning, go sight-seeing and then get home to eat.

items i'll be bringing:
* cutting board
* sharp knife
* two bowls
* seasonings (as much as i can muster without taking up too much room)

You can buy premade meatballs and throw those in with a jar of sauce. I would just serve on a roll with some mozzarella cheese. If you bring a cheap hot pot you can boil water and cook pasta in that.

Buffalo chicken You could serve with rolls, baby carrots, or even do lettuce wraps.

Pulled Pork My favorite slow cooker recipe. Only problem would be it's hard to find a small cut of meat and shredding it can get messy. Serve on rolls and pick up some coleslaw to go with it.

You could probably do something with chicken and taco seasoning. Get some wraps and top with cheese and salsa to keep things simple. You could also use the wraps with the buffalo chicken and pulled pork.

I LOVE THIS! So yummy and easy

Sweet Baby Ray's Crock Pot Barbecue Chicken

Ingredients
5 to 6 boneless skinless chicken breasts thawed
1 (18 oz ) bottle of Sweet Baby Ray's BBQ sauce (any bbq sauce will work though)
2 tablespoons vinegar
½ cup of brown sugar
1 teaspoon red pepper flakes
½ teaspoon garlic powder


Instructions
Mix all ingredients together (except the chicken)
Put chicken in the crock pot and pour sauce mixture over the top.
With a large spoon, stir all together, coating chicken well.
Cook on low for 4 to 6 hours, or until chicken is fall apart tender.

Throw the following in the crockpot and just let it cook:
*4 to 5 chicken cutlets (can be frozen or not)
*1 container of salsa
*1 package of frozen corn
*2 cans of diced tomatoes
*1 large onions
*2 - 3 peppers
*salt, pepper, garlic powder, onion powder (add any hotter spices you would want)

When it's finished cooking, shred the chicken and mix it all together.

I usually put it over brown rice and top it with cheese, but you can put it all in a soft tortilla with cheese on it (and maybe avocado if you want).

Are you going to have a way to store leftovers? If not, then you would want to scale back any crock pot recipe significantly.

Slow Cooker Honey Sesame Chicken (taken from preventionrd.com)

You could skip the green beans and rice part. I'm not sure if you could just throw the beans in all together or not? Worth a try!

4 boneless skinless chicken breasts (1.25 lbs)
1/2 cup honey
2 Tbsp low sodium soy sauce
1/2 onion, diced
2 1/2 Tbsp ketchup
1 Tbsp safflower oil or extra-virgin olive oil
3 cloves garlic, minced, pressed or grated
1/2 tsp red pepper flakes
2 Tbsp cornstarch
1 Tbsp sesame seeds
1 cup dry basmati rice
1 tsp extra-virgin olive oil
1 lb green beans, trimmed and cut in half

Directions:

Put chicken into crock pot.

In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken.

Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through.

Cook rice according to package directions.

Trim green beans. Heat 1 teaspoon olive oil in a skillet until hot. Add green beans and saute 5-6 minutes or until cooked but tender.

Remove chicken from crock pot, leave sauce. Whisk cornstarch into liquid in the crock pot. Replace lid and cook sauce on high for ten more minutes or until slightly thickened.

Shred chicken or cut into bite size pieces, then return to pot and toss with sauce. Serve chicken over rice with green beans, garnish with sesame seeds.

Yield: 3/4 cup rice with 5 ounces chicken/sauce and 2/3 cup green beans.

Nutrition Information (per serving): 553 calories; 6.8 g. fat; 69 mg. sodium; 465 mg. sodium; 87.8 g. carbohydrate; 4.8 g. fiber; 39 g. protein

i'll be able to have left overs for one additional meal... we'll have a cooler... but i am not going to push it more than that.

yes, some of these recipes will be cut back to make enough for two meals.

The one I posted you can definitely cut back- I have done it when I didn't have 5-6 chicken breasts on hand.
It worked fine.
