What's the best pasta salad you've had
Honestly my favorite is just: tri color pasta with roasted red peppers, mozzarella, and Wish Bone Italian dressing. For some reason...has to be Wish Bone. ETA: you can also add chick peas, black or green olives or broccoli.
I've also made one that was just orzo, basil Parmesan with a lemon vinaigrette, but that was more of a side instead of rice.

Re: What's the best pasta salad you've had
I just kind of wing it and get a ton of compliments on this one:
Tri Color Rotini Black and Green olives Fresh Mozz Balls (Marinated if you can get them) Cut up roasted red peppers from the jar Baby Argula finely chopped up Chopped Red onion Cherry tomatoes, halved Bottle of Zesty Italian Dressing (can be wishbone or Ken's but has to be the ZESTY kind)
It's best if made the night before or sevearl hours before an allowed to sit

Re: What's the best pasta salad you've had
Cold tortellini salad is my favorite. I make it pretty simply - tortellini, sun dried tomatoes, bocconcini, fresh basil and olive oil. I season it with salt, pepper, onion powder, garlic powder etc. and I just taste as I go. I always get compliments on it.
ETA: Sometimes I use roasted red peppers instead of sun dried tomatoes - either way is delicious!

What's the best pasta salad you've had
Standard tri color rotini or farfalle with: 4 bean salad, drained Chick peas Roasted red peppers Blanched broccoli Sliced black olives Frozen peas and carrots, steamed Dressing- I love good ol Wishbone like someone said or ken's Light Caesar with some of the oil drained out, I add oregano when I use that. I found that slightly undercooking the pasta is the best way to go.

Re: What's the best pasta salad you've had
Everybody raves about mine: Tricolor rotini stick of pepperoni, cut into discs, then 1/4s block of mozzarella, cut into cubes red onion, small dice tomato (either seeded and diced, or grape tomatoes) Good Seasons italian dressing (the packet that you mix with your own oil & vinegar) *optional: at times, I've added some blanched carrots and broccoli

Re: What's the best pasta salad you've had
I make a tortellini salad all the time that I always get a lot of compliments on and it's very simple.
I try to find the tri-color tortellini because it makes it more colorful, but if not I use regular.
I use 2 red and orange peppers, green olives, shredded cheddar cheese and sometimes I add broccoli. I put everything together except for the cheese and let it cool in the fridge for a little. Then I add the cheese and Wishbone Italian Dressing. It's delicious!

QUESTION!? IT'S A STUPID ONE! is the broccoli raw or cooked?

Re: What's the best pasta salad you've had
I love the Mediterranean one that I make - super simple and super yummy. And one box of pasta makes so much with this recipe:
- Two bell peppers (I like using yellow/orange and red) - Cherry tomatoes (usually one box) - Red onions (about half chopped up small) - I like to use Farfalle/bow tie pasta - once it cools down, add in the veggies - Then I make a vinaigrette that's part vinegar, part olive oil, oregano, salt and pepper and add it to the salad. - Once salad has fully chilled with the vinaigrette, I toss it again, and add in crumbled feta.
Yummy.

Mine is similar to this and usually includes whatever I have on hand: Bow ties, penne, whole wheat or tricolor rotini Cherry tomatoes halved Sliced Back olives Cooked brocolli Minced yellow pepper Italian dressing Cubed mozz cheese Red onion Extra spices like s&p, garlic powder, oregano, crushed red pepper flake Add EVOO and parm cheese before serving
If I don't have fresh veggies I just use frozen peas, corn, green beans
