Best Cucumber Salad
Posted about BBQ'ing this weekend. Saw a recommendation about a Cucumber Salad. I'm still a beginner chef... LOL Just saw in some reviews about it being exact, which scares me a bit.
I bought 5 large cucumbers, but I see in one recipe it asks for 4 medium and it having to be exact. Someone mentioned salting the cucumbers first for a bit too.
Any advice and good (easy) recipe?

I thinly slice the cucumbers, thinly slice red onion, and chop up tomatoes. I add red wine dressing, salt and pepper. Real good!

Don't be intimidated. You do NOT have to be exact at ALL. I don't know why it says that. I am not exact, and I don't even heat the mixture like it says when I make cuke salad. I just throw the sugar, vinegar and water together, mix as much as you can to try to get sugar to dissolve, add onion and cuke, and stick it in the fridge. Sometimes I add the mint, but I prefer it without. It's pretty foolproof! Give it a shot!

Best Cucumber Salad
thin slice cucumbers mince some herbs - dill, mint, parsley, chives (whatever you want) thin slice some red onion (maybe soak in ice water to remove some of the "bite") halve some grape tomatoes
mix white wine vinegar, rice vinegar, sugar, a dash of red pepper flakes, black pepper, salt until the sugar dissolves.
mix cukes with dressing and let it sit for a while, stirring every now and then.
ETA: I use those little persian cucumbers. if I were to use a regular cucumber or one that had a lot of seeds i would slide it in half and use a spoon to scrape out the seeds.

Exactly what I do. Strangely I love to eat this alongside tuna salad. For some reason it goes so well. One of my fave lunches

Someone mentioned salting the cucumbers before adding water ans vinegar. You do that? Also, my mil makes a cucumber salad but never heated it so it should be fine without heating?

i think there is all different kinds of cucumber salad.
For mine, I thinly slice the cucumbers, thinly slice some onion and toss with lemon juice and olive oil. I season with fresh chopped basil, oregano, sea salt and fresh ground pepper. Easy peeasy and delicious!

I make one with greek vinagrette dressing and feta cheese. There are all sorts of variations, you def. cant go wrong.

Salting is just going to pull more water out of them. I don't salt mine. The vinegar adds enough of a bite IMO. And yup- I never heat it. I imagine it is only heated to get the sugar to dissolve. If you mix it well and let it sit long enough, it will dissolve on its own. I do use room-temp filtered water. That helps.

Best Cucumber Salad
A friend of mine always makes this and it is delicious.
7 cups of cucumbers
1 cup of sliced onion
1 sliced green pepper
1/2 cup of sugar
1 cup of white vinegar
1 tablespoon of salt
1/2 teaspoon of mustard seed
2 bay leaves
1/4 teaspoon of black peppercorn
1/2 teaspoon of dill seed
1/4 teaspoon of dill weed
Mix together in a large bowl.
Cover & refrigerate for @ least 24 hours before serving.

I do the same, I also add olive oil, and dry mint. I use cherry tomatoes. Its also yummy with Feta cheese if you want an alternative to Greek salad.

I thinly slice cucumber and vidallia onions. In a bowl I mix white vinegar, sugar, salt, white pepper and dill and pour over and let sit overnight. I do not measure but I am sure you can google a recipe. It is soooo good.
