Re: Dark stain to minimize grain?
General Finishes Gel Stain.
You don't need to sand down the wood either, just give it a REALLY good cleaning and get staining. Java is their darkest color and it does a really good job of hiding the grain, especially in oak. If you google images for Java Gel Stain specifically, you will see lots of examples of how people changed the look of their furniture using it.
We've used their water stain and gel stain, both are an EXCELLENT product. You can only order it online though. Amazon, Woodcraft, and Rockler all carry it.

You most likely want to use a gel stain as that is sitting on top of the existing finish and doesn't really soak in.
The thing with oak in general with stains, the grain pattern soaks in the stain and takes it differently accentuating the grain.

General Finishes sells urethane topcoats to go with their stains. Soooo easy to use, very nice satin finish too.
