Fav Weeknight dinner - not crockpot
I am not a big cook. I make some things that are good and that's it. I get insecure when it comes to entertaining so go for some easy stuff or at least stuff I can taste before serving. I think that's why I fear baking cakes or pies.
Anyway, watching Food Network got me interested in trying some new things. Figured I'd start out with some easy and flavorful recipes. Any recommendations?
THanks!

Re: Fav Weeknight dinner - not crockpot
These are some of our easy favorites we always go back to.
Paula Deen's meatlaf really flavorful and easy to put together. I usually bake 2 and put one in the freezer to reheat another day.
Ina Garten's Lemon Chicken I use skinless breasts and they come out so good. Definitely something you can serve to guests but easy.
Curried Coconut Chicken I follow the first reviewer's advice and cook the oil, onions, and curry together for a few minutes. Easy, different, and yet the sweetness would appeal to the kids too.
Buffalo drumsticks I'm not a fan of drumsticks but I make these with the roaster drumsticks since they have a lot of meat on them.
Homemade shake and bake I make this with roaster drumsticks, breasts, nuggets, pork chops. Comes out crispy and so good!

Recipes: Katie Courics Lemon Chicken - Yummy - I make with the Kashi Box rice, Follow box directions but use chicken stock instead of water for more flavor
Swanson Pan Sauteed Chicken and Veggies
Red Lobster Biscuits - Awesome and so easy to make. I make it with everything, Pasta dishes, meatloaf, just because
Ina's Meatloaf but with Turkey Ground Beef
Whole wheat Spaghetti and Meat Sauce : Basically cook onions and garlic in Olive oil, add Turkey ground beef with some seasoning (onion & garlic powder, orgeano, salt, pepper, Italian seasoning and sugar), once meat is brown I add Prego Sauce and Tomato paste and simmer. Server over the pasta w. biscuits.
Sides
*South beach Califlower Mash *Canned Corn warmed in the Microwave with Salt, pepper, Butter and garlic powder *Glazed Carrots and Green Beans - Throw them in a pan and cover with Olive Oil, maple Syrup, salt and pepper. Bake in oven for 30 minutes.

Crispy Onion Chicken
Cheesy Honey Mustard Chicken
Angel Chicken Pasta
Sweet & Spicy Sriracha Glazed Salmon
Grilled Cheese Buffalo Chicken
Spaghetti squash is another great option. I bake it for 45 minutes at 350 and then toss with EVOO and garlic or tomato sauce.

My current favorites:
- Spaghetti w/ bolognese sauce - I have a super easy recipe I can share if interested - Chicken noodle soup - Chicken quesadillas (we usually buy a roasted chicken on Sunday and then use it to make the quesadillas or the noodle soup) - Homemade pizza (a bunch of stores now sell the dough - we buy that, and then change up the toppings) - Baked chicken w/ peppers, with a side of roasted potatoes

Some go-to meals in our house are turkey tacos, meatloaf, grilled chicken, pasta with the leftover grilled chicken and broccoli, turkey meatballs and pasta, fish tacos, baked fish, steak, and now that it's getting colder I do more soups.
