What's your easy weeknight dinner?
Need some ideas! Been slacking with dinner and I promised DH that when I left my job I'd eat more. For some reason the day flies and he's home before I know it so haven't had too much dinner ideas. Wanted to go food shopping today, but it's nasty out and don't want to take the baby so figured I'd go tomorrow.
Oh, I also have a crockpot still in the box. Lol. Woops... Ny ideas for that would be great. I don't eat red meat and DH doesn't like spicy.

Easiest dinners for us when I'm short on time:
Grilled Cheese and Tomato soup Pasta with Chicken sausage, salad, garlic bread Turkey Tacos Vegetarian or Turkey chili Soup Crock pot stew

What's your easy weeknight dinner?
Chicken cooked in salsa or italian salad dressing Grind flavored pretzels mix 1/2 breadcrumb, 1/2 pretzel crumbs, coat chicken in honey mustard, coat with crumbs, bake/fry flavored chicken/turkey burgers - i use green salsa and cheddar cheese DS loves tacos. I made "Chips" for dinner Sunday and DS loved them - ground chicken, a little taco spice to taste, black beans - I filled the tostito scoops, topped with cheese and melted the cheese. Sausage with spinach and tomatoes - take the sausage out of the casing and brown, add a can of petite diced tomatoes to warm. wilt 1 small bag baby spinach. Serve over pasta

I love making Enchilada using chicken from the crockpot. Try this recipe.
Chicken Ranch Enchiladas 1 packet taco seasoning 1 packet ranch dressing mix 1 can (14.5oz) low-sodium chicken broth 6 chicken breasts 12 flour tortillas 2 cups shredded pepper jack cheese (or cheddar cheese) 1/2 cup light ranch dressing 1/2 cup salsa Place chicken, taco seasoning, ranch mix and chicken broth in 6-quart slow cooker. Cook on low 6 hours. Remove chicken from slow cooker and shred. Reserve liquid for rice.
Divide chicken and cheese between tortillas. Roll up and place in a lightly greased 9x13-inch pan. Bake at 350 for 20 minutes.
Combine Ranch dressing and salsa. Pour over baked enchiladas. Serve with rice.
FOR RICE 2 cups instant brown or white Rice 1 tsp olive oil 1 Tbsp dried minced onion flakes 1 can (8oz) tomato sauce 1 1/2 cup crockpot liquid
Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. Stir in onion flakes, tomato sauce and crockpot liquid; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork

sausage, potato and onions-in bakeware and in oven can be pork, chicken or turkey sausage
chicken/beef/turkey burgers, baked potato ,salad,beans
lemon chicken-just sauté chicken breasts in garlic a little oil, add lemon juice, wine and/or chicken stock, can throw in artichoke hearts, capers etc. brown rice on side
flounder under the broiler for 10 minutes with lemon salt pepper, rice as a side, salad
meatloaf is quick prep
I have tons of quick meals with a one yr old I don't have the time I used to lol

black bean burgers with sweet potato fries sauteed chicken sausage with rice and a veggie chicken cutlets with brown rice veggie or turkey chili in the crock pot pot roast in the crock pot beef stew in the crock pot rice and beans with avocado pasta with pesto with salad corn, black beans and avocado salad

Different kinds of burgers - beef flavored with bbq sauce or turkey flavored with hot sauce Omelets with toast or homefries Tacos Sausage with rice pilaf and green beans/spinach/asparagus Pasta with a quick meat sauce or sausage Homemade pizza Shake and Bake style chicken sauteed pork chops with dijon sauce leftovers
I also keep things like taco meat or bolognese sauce in the freezer so I can defrost overnight and make a variety of quick meals (enchiladas, ziti, taco bowls, etc)

Salmon, a sauteed leafy green, brown rice
Tacos
Black bean and cheese Quesadillas with salad
Noodles in sesame oil/soy sauce mix (garlic and scallions and sesame seeds too) with bok choy and baked tofu cubes
Baked or grilled chicken with over fries and steamed brocolli

Oh thought of another easy one! Kraft Fresh Take on chicken! It's like a yummy twist on Shake n Bake- you find it in the dairy aisle near the shredded cheese. SOOO delish!

Salsa chicken! Coat two chicken breasts with taco seasoning and place in baking dish. Cover generously with salsa and bake at 350 for 30 minutes. Add shredded cheese during last five minutes of cooking. When done, top with sour cream and green onions. Yum!
