Menu thread, 12/28/14
I figured I would start one, since I am trying to plan my menu anyway:
Sunday - meatloaf with roasted potatoes and either roasted Brussels or kale Monday - orrechiette with cauliflower (my new specialty!) Tuesday - big salad, maybe with chicken or with spanikopita Wednesday - going to a party where there will be food, so at most we might just have a little snack at home so we aren't starving by the time of the party Thursday - farfale with broccoli rabe and maybe sausage Friday - leftover meatloaf Saturday - probably out
I'm also probably going to make an Indonesian red lentil salad (sooo good) to have during the week as well.

Sunday- Turkey chili in the Crockpot
Monday- Spaghetti Squash Lasagna Boats
Tuesday- Cheesy Mexican Chicken
Wednesday- Beef Wellington, mashed potatoes, asparagus and garlic bread
Thursday- Chicken Parmesan with Heart Shaped Pasta
Friday- Spinach salad with Craisins, blue cheese and raspberry vinaigrette
Saturday- I think we're going out for DH's cousin's birthday.
Edited because I didn't stick to my original menu.

Here's the recipe. My changes were - I didn't use mace, because I didn't have it, so I just used a little extra nutmeg. I also added a 1/2 tsp sweet paprika. I use extra capers, and currants, and use a mix of evoo and canola or grape seed oil. I also just mixed everything together right away, I didn't do it in multiple steps as suggested. You can also throw in some extra veg if you want (carrots, peppers, broccoli in tiny pieces). After I cook the lentils I usually spread then out on a sheet tray lined with paper towels and blot the top to remove the liquid. Make sure to undercooked the lentils and put the dressing on while the lentils are warm so it absorbs. The salad is also really good with some feta mixed in. Enjoy!
Salad
Ingredients:
1 pound dried red lentils 1 cup currants 1/3 cup capers 1-1/2 cups finely chopped onions
Instructions:
Wash lentils and cook in boiling water, testing after only 2 minutes; cook about 5 minutes, or until tender. Rinse and drain. Combine dressing ingredients and pour over lentils. Refrigerate overnight. Two hours before serving, mix in currants, capers, and onions. Keeps well when refrigerated.
Vinaigrette Dressing
Ingredients: 3/4 cup corn oil (or other neutral oil) 1/2 cup red-wine vinegar 2 tablespoons sugar 2 teaspoons salt 2 teaspoons pepper 1 teaspoon ground cumin 1 teaspoon dry mustard 1/2 teaspoon turmeric 1/2 teaspoon mace 1/2 teaspoon ground coriander 1/2 teaspoon ground cardamom 1/4 teaspoon cayenne 1/4 teaspoon ground cloves 1/4 teaspoon nutmeg 1/4 teaspoon cinnamon
ETA: It looks like a TON of dressing, but since you are undercooking the lentils, it gets absorbed by them. If you are concerned, you can pour in some of the dressing and let it sit for a while to see if you think it needs more.

Saturday: Going to the movies then out to eat with DH
