Menu thread 1.11.15

Sat: chicken Lombardy over brown rice and mixed veggies
Sun: tostada bar with all the fixings and quesadillas
Mon: French onion soup casserole
Tues: chicken parm over kale
Wed: turkey meatballs with baked ziti
Thurs: leftovers
Fri: homemade split pea or lentil soup
Sat: out or lemon chicken with rice pilaf

Sunday- Pasta with meat sauce
Monday- meatloaf, mashed potatoes, roasted broccoli and cauliflower
Tuesday- Crock pot chicken and rice soup with cornbread and salad
Wednesday- leftover meatloaf
Thursday-Baked lemon chicken, brown rice, salad
Friday- out
Saturday- probably homemade pizza

Sunday - roasted chicken quarters (legs and thighs) with roasted cauliflower and polenta from a tube that I sliced and browned on the stove
Monday - israeli couscous with roasted butternut squash, chickpeas, kale, olives, dates, apricots, and preserved lemon
Tuesday - Maybe a big salad
Wednesday - Eggplant parm with spaghetti (annie's eats recipe using roasted eggplant instead of breaded/fried)
Thursday - chicken breasts, broccoli, and something else
Friday - maybe out
Saturday - probably just a snack, since we are having brunch at a friend's house

Edited bc there wasn't enough couscous leftover for another dinner.

Mon - ST bolognese with spaghetti squash and soinach salad, pasta for DDs

Tues - baked potato soup

Thurs - greek turkey burgers, ST cucumber noodle greek salad

Weds - corn chowder and ?

Thurs - leftovers

Fri - ?

Sunday: Went to my in-laws.

Monday- Balsamic dijon grilled chicken with a mix of leftover sides

Tuesday- Broiled salmon

Wednesday- Chicken cutlets topped with tomato, mozzarella, basil and balsamic reduction & penne fra diavolo

Thursday- Turkey burgers and baked potatoes

Friday- ST Bangin Good Chicken Salad

Saturday- Lomo Saltado

Sunday: Cheese Ravioli in a Puttanesca Sauce.

Monday- Rustic Turkey (it's basically chopped turkey with a ton of chopped veggies like broccoli, peppers, carrots and onions and lots of different spices/herbs) with Deluxe Baked Potatoes.

Tuesday- Chicken Tortilla Soup topped with Avocado, Lime & Tortilla Chips.

Wednesday- Pasta Carbonara.

Thursday- Probably Leftovers.

Friday- Out for Pizza!

Saturday- Scrambled Eggs with veggies, bacon or sausage and bagels.

No real recipe, I made it up. But here's what I did:

Ingredients:
Butternut squash
Cinnamon
Evoo
Salt
Pepper
Smoked paprika
Pomegranate molasses
Garlic
Kale
Low-sodium chickpeas
Dried apricots
Dates
Parsley
Green olives with pimentos
Preserved lemon
Yogurt
Cilantro cubes
Harissa
Onion/shallot
Israeli couscous
Veg broth (if you want)

Cut half a butternut squash into small cubes. Toss it with evoo, salt, pepper, cinnamon, smoked paprika, and pomegranate molasses. Roast at 500 until caramelized.

Meanwhile, cut a bunch of kale into small pieces, and saute in a pot with two cloves of chopped garlic, evoo, salt, and pepper. Remove from pot.

Dice some onion or shallots (I used shallots) and saute in evoo in the same pot until lightly brown. Add 2 cups israeli couscous, and stir around until lightly toasted. Add in 2 1/4 c liquid (or as much as your couscous package calls for) - I used 1 c veg broth and 1 1/4 c water. Drizzle in a little pomegranate molasses. Bring to simmer, cover for 8-10 min or until couscous is tender, stirring occasionally.

While the couscous cooks, drain and rinse a can of low sodium chickpeas. Slice a bunch of green olives with pimentos in half. Mince up a small preserved lemon (make sure to remove the seeds) and some parsley. Cut up about 8 apricots and 5 dates. When the couscous is done, fold in the kale, squash, chickpeas, dried fruit, olives, preserved lemon, and parsley. Make sure to taste for salt.

I served this with an additional drizzle of pomegranate molasses on top.

I also made a harissa-cilantro-yogurt sauce to go with it. I took one small container of greek yogurt (I had 2% but you can certainly use fat free) and mixed in 2 frozen cilantro cubes, 1 frozen garlic cube, and a bunch of harissa.

Sun - had a big lunch, so we just had apples and a few pieces of cheese while watching the Golden Globes

Mon - big salad (greens, tomatoes, artichokes, avocado) and baked sweet potatoes stuffed with a tomato-chickpea-carrot-soy crumbles sauce

Tue - veggie burgers (on a bun for him, over rocket salad for me) and baked sweet potatoes

Wed - same as Mon

Thu - if there is any of the sauce from Mon left, then just boiling up some pasta and tossing it together with some mozzarella. And a salad.

Fri - Going to see It's Only a Play...not sure what we'll eat.

Sat - Soup!

Sun: We had FH cousin's daughter's christening
Mon: chicken wings with peas
Tues: island shrimp with rice and corn
Wed: skirt steak with sweet potatoes and broccoli
Thurs: BBQ pork in the crockpot and not sure what sides
Fri: date night
Sat: FH working and I'm going to a late lunch with friends so probably nothing or if anything leftovers
