Weeknight Go-To Meals?
I'm trying to get back into the swing of cooking everynight after tax season. Can you give me your go-to quick meals? Mine currently are: tacos, skinnytaste chicken parm, fried porkchops, lasagna. HELP!

Now that it's summertime we grill at least two nights a week. Even just hamburgers/hot dogs, or chicken that I let marinate all day.
Someone posted about chicken sausage and strawberry kebabs and it is delicious!! And so simple. And I just throw if over some salad.
I also do the skinnytaste loaded vegetarian sweet potatoes. That's about a 20 minute meal (I microwave the potatoes).

i get home very late, so time is not on my side
grill protein- steak, chicken, pork, shrimp- on the bbq or just a pan with oil.
sides- steamed spinach or a salad or couscous. 20 min TOPS
grilled calamari and shishito peppers are my obsession

I pre grilled cutlets on Monday, froze some, kept some out for din and froze the un cooked portion. Helped a lot

Shrimp scampi is quick and easy- over rice or pasta Grilled shrimp skewers Grilled steak/chicken/pork tenderloin that I marinade during the day, usually with salad and rice/couscous - I always try to make extra grilled chicken for leftovers, or I'll sautée veggies with garlic and oil, throw in cut up grilled chicken, and serve over pasta Meatloaf- make early in the day and then just cook while I get other stuff done around the house We eat fish at least once a week- baked, oven fried, grill fish tacos Tacos Crockpot meals- my absolute favorite is pulled pork. You can make it into sandwiches, though we usually make tacos Weekend cooking can be things like beef stew, soups, chicken chili, lasagne

Weeknight Go-To Meals?
We do a lot of bruschetta style chicken this time of year. I marinate tomatoes in balsamic, olive oil, garlic, and basil. Then bread and bake or grill chicken, melt mozzarella over the top and spoon over the tomatoes at the end.
Tacos with ground chicken and fresh guac.
Italian sausage parboiled and then browned.
Burgers or hot dogs
Pork fried rice
skinnytaste buffalo chicken tenders. Super quick and tasty

Wish I had a bbq grill. Darn co-op apartment.
Tonight's dinner is sauteed eggplant and mushrooms, tossed with pasta, sauce and fresh mozzarella. Side salad for DH, spinach tossed with the pasta for me. Quick and easy.

I live in the gardens. I can have a grill, but it has to be in the back of tbe buildings. It's not convenient especially since I am on the second floor. Food would be cold by the time we walked it back inside.

I grill everything on an indoor grill pan.

we try to grill at least 2 nights a week...but other go to meals that don't require the grill are...ravioli's with red sauce, stuffed peppers in the crockpot, jambalaya, chicken soup, pasta with broccoli and sausage

We do fish or shrimp once a week. Baked salmon with store bought pesto sauce and fresh tomatoe slices is an easy one.
Pasta maybe once a week. I'll sautee broccoli and sausage with some EVOO and tons of garlic.
Fajitas or Tacos
Stuffed peppers
Philly cheese steaks and sweet potato spears
Slow cooker chicken teriyaki over rice
Stirfrys consisting of tofu (or other protein) and tons of veggies
Summer salads with grilled chicken

Weeknight Go-To Meals?
This time of year it's all about grillng. Chicken wings, sausages, burgers, chicken cutlets, salmon. Tonight I did a beef stir fry on the grill. Came out great!

I grill every night. I shop the circulars and buy meat that is on sale for the week. I marinate most meat, unless it is steak. I make a veggie, and rice/potaotes, or some sort of summer salad to go with the meal. Quick and easy clean up

Weeknight Go-To Meals?
My DH doesn't eat meat so we make homemade pizza, salads, quiches, pasta primavera, veggie burgers, meatless tacos, chili, shrimp kabobs, grilled veggies, stuffed sweet potatoes, we eat a lot of eggplant now and I'm always trying new varieties of recipes with it.

Haha, yes. But it's not much of a recipe. I use about three or four of the thick cut chicken breast, sprinkle with salt and pepper, then add a bottle (or enough to cover the chicken) of store bought (Fairway brand is my favorite) teriyaki sauce, and I cut up a few sweet potatoes into cubes (2 or 3 depending on size). I just throw everything in the slowcooker for about 6-7 hours and make the rice separately. It doesn't get much easier, but it comes out soooo good.
