I have to go a Gluten Free....anyone have recs?!
I'm so overwhelmed of where to start.
Anyone who has done this, any resources would be great!!!

The idea of it is more over whelming then what it actually is. There are so many products out there that it is easy to swap out. I have a lot of family members who are GF and I host Christmas and birthdays. It is really easy to come up with a menu. Some of my go to brands are: -Imagine for stocks, broths and gravy -Alexia for bread crumbs -Bob Red Mill for oats and various flours and meals -Ronzoni for pasta or Ancient grains (I think that is the name it is a teal package) for pasta. It is brown rice and quinoa.
If I cook quinoa in water then I can make cookies with it (there is a recipe on rachel ray show that is amazing). Other wise I make a big batch and cook it in chicken stock. Then I will sauté various veggies with garlic and then mix it. I recently made stuffed peppers and used cooked quinoa instead of rice and i loved it so much more.
Keep cornstarch on hand for a thickener or even for breading or searing of meats.
A lot of condiments have gluten so you will need to check that.
Gluten Free Goddess is a great site and if you do a pinterest search for Paleo recipes all that will be gluten free.

My kids and I were diagnosed with Celiac Disease around Christmas time. It has been an adjustment but we are learning. The hardest part was cleaning my whole kitchen. I mean whole kitchen. Gluten is sneaky and once we went gf a little bit can causes a lot of pain I purged my house of anything containing gluten and then started scrubbing. We eat mostly unprocessed foods because even though something states it's gluten free there may still be a cross contamination risk. Gluten free foods are tested to 20mcg. A crumb of bread has 50mcg. So the theory of a little bit won't hurt doesn't apply here Check out glutten free on a shoestring It's a great site and gives a lot of great info and recipes. Also Aldi has a lot of gf stuff under their Live G Free brand. The baking mixes are good an won't break the bank. Read labels and contact companies if you are unsure. My poor son was glutened by a lollipop someone gave him. They thought it was safe since after all it's just a lollipop. But it had wheat starch in it. It is very overwhelming at first but it does get easier. Especially when you start feeling better. Good luck!

I know it's so overwhelming. My bf's mom was diagnosed with celiac over 10 years ago and it was not well known then. When she heard no pasta and bread, etc. she was like I'm Italian you might as well kill me now. Seriously, she made her start researching funeral plots!
Anyway, there are so many resources now and so much information. I've eaten a ton of gf stuff and it definitely takes a little getting used to but now I don't even bat an eye. As other posters mentioned it is very serious as you know so everything has to be checked. And her mom doesn't believe anyone. If a waiter or someone says yes it's gf, unless she is 100% sure or knows the restaurant herself she won't eat there. I've been to weddings with her where she has not eaten a thing. She ate before we went. She has gotten very sick too many times so doesn't trust anyone now.
It was difficult in the beginning of course but now it's just her way of life. Once she was diagnosed and started gf she said she finally felt human again after awhile.

My son's blood tested off the charts for celiac's at the beginning of April, since then we have put him on a GF diet. It was hard at first but it has become routine. They have a lot of GF options now offered in stores, I have found GF items where I normally shop like Target or BJ's.

The cross contamination concerns me. People not understanding that I'm not doing it as a "fad diet" I have to eliminate it to feel better. I haven't decided to switch my whole family, they just love their bread & pasta so much. But I've explained to them I'm doing it to feel better, not some crazy diet.
I don't have celiac, but Hashimotos, & basically my body with attack the gluten in my body. So even a little will make me misterable.

If you are going to be the only one. Get yourself your own toaster, strainer, wooden spoons and sponge. Put the gluten stuff in the dishwasher. Any dishes hand washed do separately with different sponges. Have a designated area for you. You don't want their crumbs on the counter where you are preparing your foods. Be careful when cooking. Use separate utensils for cooking. You don't want to stir their pasta then yours. Wheat flour can stay suspended in the air for a long time and then settle on counters and other surfaces so be very careful if you are using gluten containing flour. When I started only my older son needed to be gf but I decided it was safer to switch the whole house over. Now 3 out of 5 are confirmed Celiac. My husband and youngest still eat it outside the home but the house is gf.

Oh wow!!!! That just might have sent me over the edge!!!! I'm completely overwhelmed by this, & I hate that I have to change my family for me too. I never even thought such little traces would cause a problem too

It is that bad for my family but we have Celiac Disease. It might be different for you. Ask your doctor if you have to be Ceiliac safe. I have a friend with NCGS (non Celiac gluten sensitivity) and her doctor actually advised her to eat 80/20. Gluten free 80% of the time. Honestly eating gf isn't bad. My husband says he doesn't even miss it. We eat so much healthier now since we eliminated most junk foods. You can make pretty much anything just using different ingredients. It was very overwhelming at first but now 6m in it's not as bad. I will admit I still haven't gotten the hang of eating out but I'm making progress lol I'm sorry you are going through this. It isn't easy but it is worth it. After 6m my son has normal antibody levels and my daughter is almost normal. Both of them feel great and are different kids. They are finally gained some weight.

If you don't have Celiac, I don't think trace cross contamination will affect you. I know a bunch of people who go paleo for autoimmune disease and they did not buy new cookware, appliances, etc.

I think that's where I fall. I need to be GF for the AI disease I have, BUT right now I also have to follow an AIP (which is stricter than Paleo) to heal my gut. So when I can finally go off this....GF will be a breeze!

That's the next book I plan to get, I didn't realize they had a FB. Thank you. I am not apart of some Hashimotos ones. I've been AIP for 2 weeks as of tomorrow, so far....I'm alive still

I had to go gluten free. I went out spent all this money on GF things like snacks and stuff and it was all terrible salty etc. my best advice for your taste buds and wallet is just eat things naturally gluten free. Fruits veggies meats quinoa brown rice etc. I used to think it was terrible and it very may still be eating out but now I opt for salads usually. I had unhealthy habits prior and it forced me to just focus on whole foods. I can get in and out of the store for 2 people for about $85 a week. We eat gluten free just naturally all the time. I have nothing specifically labeled gluten free in my kitchen. Sure some stuff says gluten free but it wasn't made it altered to be just gluten free ex: popcorn lol my shopping list each week is as follows: Eggs Spinach Kale Strawberry Blueberries Apples Sunflower butter- 1x month Almond milk Milk Almonds Hummu Carrots Celery Meat- I usually pick a fish chicken and beef I buy brown rice in bulk Yogurts And I drink shakes in the morning I get fairway grass fed whey protein I also get these noodles: mungbean noodles they are a vegetarian plant based noodle naturally gluten free For flour I used almond flour. Our diet pretty much follows paleo and is all gluten free

I follow autoimmune paleo too it's hard at first bc something's that are very healthy are off limits and I'm a vegetarian but it's fine now.

The AIP really has given me a new perspective on quality of eating. I also think I'm even more addictive to avocados. I wasn't feeling so great for the past 2 days, but today I feel a world different! I've been coffee/caffeine free since Monday afternoon too!
I just hope I heal quickly & can reintroduce some items back in.

Thank you!m I'm not sure what to expect anymore! 10+, if not since childhood, full of symptoms & GI issues. Not sure what my "norm" is...but I've never eatten healthier! 3 weeks today I started AIP, & tomorrow will be 1 week of no coffee too! I just wish my energy would be back. When it does seem to return I try & walk/slow jog, & then I'm exhausted for days. Maybe coincidence or just the detoxing, but I miss working out!
