Potatoes
name your best potato recipes. have so many potatoes need to figure out what to do with them. already made potato salad, mashed potatoes, roasted potatoes and put them in soup!

Mashed potatoes are our favorite but we also really like twice baked potatoes. I use The Pioneer Woman's recipe:
8 baking potatoes, washed 3 tablespoons canola oil 2 sticks salted butter 1 cup chopped scallions 1 cup sour cream 1 cup Cheddar or Jack cheese (or a mix of both), plus more for topping 1/2 cup whole milk 2 teaspoons seasoned salt 3 green onions, sliced Freshly ground black pepper Directions
Preheat the oven to 400 degrees F.
Place the potatoes on a baking sheet. Rub them with the canola oil and bake for 1 hour, making sure they're sufficiently cooked through.
Slice the butter into pats. Place in a large mixing bowl and add the bacon bits and sour cream. Remove the potatoes from the oven. Lower the heat to 350 degrees F.
With a sharp knife, cut each potato in half lengthwise. Scrape out the insides into the mixing bowl, being careful not to tear the shell. Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet.
Smash the potatoes into the butter, bacon and sour cream. Add the cheese, milk, seasoned salt, green onions and black pepper to taste and mix together well. (IMPORTANT: If you plan to freeze the twice-baked potatoes, do NOT add the green onions.)
Fill the potato shells with the filling. I like to fill the shells so they look abundant and heaping. Top each potato with a little more grated cheese and pop 'em in the oven until the potato is warmed through, 15 to 20 minutes.
ETA: I broil them for a little while at the end so that the outside gets crispy. That's a personal preference though.

Crash Hot Potatoes by the Pioneer Woman. Sooo good.
If I am in a rush, I microwave the potatoes instead of boiling like she does and then I follow the rest of the recipe from there. If it's summer, I use a bunch of fresh herbs from my garden. I sometimes use flavored olive oils too to change it up. Endless possiblities

crispy oven fries I've tried so many french fry recipes before finding this one that actually comes out crispy and perfect. I don't use her seasoning blend but the technique works perfectly.
cheeseburger baked potatoes I make these since dh is gluten free and they come out really tasty.
Maybe look into whether you can shred them and freeze for later for hash browns.

Potatoes
small bite size pieces, with cut up onions, tossed with EVOO, LOTS of dried basil and oregano, put in oven at about 400 and roast. Stir periodically to prevent sticking to the pan. Takes about an hour or so, I usually turn up the oven at the end for about 10 minutes to about 425-450 to get really crispy (not burnt). Absolute fave.

Roasted with evoo salt pepper and lemon juice in a pan along with chicken
My mom boils potatoes and then makes a salad with tomatoes and onions evoo and I think red vinegar
My cousin just roasted potatoes withrs dash and adobo seasoning they were really good

i cut them about 2 inches thick. Olive oil, salt pepper and grilled them they came out so yummy
