French macaron question
my cousin recently turned me on to the idea of making these bad boys.
after a couple of epic fails, i have succeeded. i'm very happy with that, BUT...
i find that these little meringue cookies are TOO sweet. they're almost sickening sweet.
does anyone out there have a recipe without so much sugar?

French macaron question
I think that's just the way they are. Maybe try to come up with some fillings that counteract it. I've ground up freeze dried raspberries and mixed them into dark chocolate which came out yummy. Buttercreams and jams definitely just add to the sweetness.

By default, macarons (and meringues) are just a super sweet treat. I would use a filling that detracts a little from the sweet so that you have a more balanced flavor. As the pp mentioned, steer clear from super sweet jams and buttercreams because they will only add more sweet to the macaron. Instead, try fillings such as a bittersweet chocolate ganache, hazelnut cream, or even a pistachio filling.
