Question about Baked French Toast Recipe- for those that make it

I have a question about the Baked French Toast Recipe.

I made it last year XMAS morning and it was DELISH.....BUT...I used slice bread and it was def VERY mushy.

What bread do you recommend to use.

I don't use all the egg/milk that they call for. I try to pour the egg mixture over it until there is maybe about an 8th of an inch excess on top of the bread. Give it a minute and make sure the egg settles into the bread before you pop it into the oven. I use a hearty farmhouse sliced wheat or hand cut brioche. My sister uses Challah bread.

I don't always use all of the custard mixture but will eye ball it because some breads are drier than others and can absorb more without getting mushy.

Also the best bread to use really is stale bread because it's drier so stands up better to the custard mixture. I usually use a brioche or challah bread.

I don't know if I use the same recipe, but my baked French toast calls for French or Italian bread. I actually do it a day in advance, keep it in the fridge and then just bake in the morning.

I always use challah bread. It's my favorite for this recipe.

Last year I used 1 cup of milk and 1 cup of eggnog and added a little nutmeg to it of course.

I used Challah and Whole Grain Cranberry Raisin Flax bread, placing them intermittently in the pan

It was amazing!

Re: Question about Baked French Toast Recipe- for those that make it

My recipe is a little different but I usually buy french bread a day or 2 in advance and let it get a little stale- it soaks up the egg/custard mixture better

I use french bread and let it sit for a few days before I make it. I also make the recipe the night before and let it soak up in the bread. Its so good!

Those that use Challah bread:

I just bought it, should I leave it out for the next few days? Also, how should I slice it: thick or thin?

Hhhhmmmm, leaving it out I'm not sure, but I would like other opinions on this too b/c I'm making it this weekend!

I would slice it on the medium-thick side. Last time I made it I had the bakery slice the Challah bread and it was too thin.

Yea I am confused how to store the bread. Normally I would freeze, but then I heard stale is better.
Do you double layer it?

Re: Question about Baked French Toast Recipe- for those that make it

We bought the bread on 12/22 and made the recipe 12/24. Just left the bread uncut in the bag. I sliced it fairly thick. I used 2 layers.
