What’s for dinner?

I found Cardini’s Caesar dressing in a supermarket here, so I made Caesar salad with chicken, bacon, hard boiled eggs, olives, lettuce, tomatoes, Parm cheese and croutons.

I marinate the chicken tenderloins in some lemon juice and with a touch of dressing and cast iron skillet or grill them. Then do the rest. I forgot how filling it is!

Sounds yum! Nothing like a good, hearty salad!

I’m making some meatballs tonight. They’ll keto so instead of using breadcrumbs, I’ll be using almond flour. I’m also making rice cauliflower with garlic, Swiss chard, tomatoes, and asparagus. Let’s see how that comes out.

I’ve made them before and they come out yummy, tonight as well. I use ground pork instead of ground beef, maybe that’s the secret? Lol.

DW ordered some "exotic" meats the other day.

We had duck and elk the other day.

Oh, nice! Do you know the kind of antelope? I do love a good springbok. I have yet to try alligator or crocodile.

I picked up some quail today as it was on special at Lidl.

I actually prefer pork, chicken, or turkey mince here. The ground beef and beef can be really disappointing. Unless you want to pay $$$$ and get local or South American.

I did smitten kitchen’s ginger meatballs in a ginger sauce and they were really good. Curious to see how that would work with almond flour instead.

growing up my best friends mom made a lot of casseroles, tuna etc, she had 3 growing boys and a girl. We never had casserole growing up unless I ate at her home.
