When mailing resumes -
Does is matter what kind of stamp is on the envelope or am I just anal?

Umm, I think you might just be anal!  
If it's a big company, the person reading the resume, may not even see the envelope.
What kind of stamp do you have?

I tried to get some from the mailroom and he has Disney, Quilt Designs, Vegetables.

Okay, since you have a choice, maybe skip the Disney, in case the person opening the mail is as equally anal & thinks its juvenile.
Quilt designs & vegatables are pretty generic.
