-Orzo with Spinach Recipe? Anyone?
I had one at a party it was delish!!!
had orzo, spinach, slice chery tomatoes and oil.
It def had a great taste to it.
I tried it once just based on taste, didnt come out so good, LOL
TIA if anyone has recipe!

how did you do it?
if those were the main ingredients, i'd probably roast the cherry tomatoes (either in the oven or on the grill) and wilt the spinach with garlic and oil in a separate pan.
add the cooked orzo to the garlic and spinach mixture, throw in the roasted tomatoes and salt and pepper to taste.
i'd also add grated parmigiano, and maybe some toasted pine nuts or sliced almonds for little crunch.
maybe a few red pepper flakes for some kick???
anyway, that's what I would do, without looking up a proper recipe.
for each bunch of garlic, I'd use a half a ball of garlic (around 5 or 6 cloves, I guess)
oh, and I might add some diced fresh mozzarella, cuz I am a rebel like that
let me know what it tastes like if you make it

We're having something exactly like this for dinner tonight. Nothing special to the recipe, really. I'm using kalamata olives and red bell pepper in place of tomatoes and adding sliced toasted almonds. Dressing is just oil and balsamic and some parmesan. For DH's portion I'm adding sliced chicken.

Here's one of the two recipes I use. The first I have tweaked it a bit to my taste. I add heavy cream and cherry or sundried tomatoes.
olive oil 2 cloves garlic, minced 4 cups chicken (or veg) stock 2 cups uncooked orzo 1 10 oz package, frozen spinach, thawed, with the water squeezed out 1/2 cup grated parmesan salt and pepper to taste
Over a medium heat, sauté garlic in olive oil for 30 seconds. Stir in broth, orzo, and spinach. Bring to boil, and simmer 12-15 min, or until broth is absorbed and the orzo is cooked to your liking. You might need to add more broth.
Sit in remaining ingredients, and let it sit for 5 minutes.
Serves 6

Orzo Salad with Spinach and Tomatoes. I usually omit the basil.
1 pound spinach, washed, dried, stems removed 1 pint grape or cherry tomatoes, halved 2 lemons, zested 1 1/2 cups orzo, cooked to al dente 1 tablespoon extra-virgin olive oil, 1 turn of the bowl 24 basil leaves, torn or thinly sliced Salt and pepper
Pile spinach leaves in stacks 1 on top of the other. Thinly slice stacks of leaves to make spinach confetti. Pile shredded spinach into the bottom of a medium sized mixing bowl. Halve grape or cherry tomatoes with a paring knife and add them to the mixing bowl. Add the zest of 2 lemons to the bowl and save the lemons in the refrigerator to juice for another recipe.
Add hot cooked and drained orzo pasta to the mixing bowl. The heat of the pasta will wilt the spinach and warm the tomatoes at the bottom of the bowl and get the juices flowing from veggies. The heat of the pasta will also release the flavor and oils in the lemon zest. Drizzle 1 tablespoon extra-virgin olive oil over the pasta and toss to combine the veggies and orzo. Add basil and salt and pepper and toss to combine. Taste your orzo to adjust seasonings and serve.

I make my own version as well!
1 box of Orzo 1 box of chopped spinach, defrosted and all water squeezed out zest of 1 - 2 lemons (depends on the size of the lemons) juice of 2 lemons olive oil - I eye ball this - a few times around the bowl, you don't want it too oily! garlic powder (maybe about a tablespoon?) A few chopped tomatoes, or about a half pint of cherry tomatoes cut in half a handful of kalamata olives kosher salt and fresh pepper to taste
I would also add any other veggies if I have them, like roasted eggplant or chopped broccoli.

Ooooh, OK. I was thinking of something different -- my version is essentially a spinach salad with orzo (cold) and some other stuff. But the warm versions sound yummy as well!
