22 people for Easter - Is this enough
For the entree I have 10lbs of meet - 5lb is lamb and 5lb is a roast. I also will have a spinach lasagna. Is this enough for 22 people, six of which are kids?

I'm really bad at this- but I would be afraid that the meat will cook down alot. Also- does either cut of meat have bones/fat on it? That will signifcantky cut down on the amount of edible meat per person.

For our family I would easily double those amounts.

Re: 22 people for Easter - Is this enough
It doesn't sound like enough to me. I usually buy a 15-17lb turkey for 14 people for Thanksgiving. If you want to stretch it, I would plate the food yourself. Serve the lasagna as an appetizer. Then serve a slice of each meat with a side or two. Do you plan on having hors duerves to pick on and/or dips crudités?

Re: 22 people for Easter - Is this enough
are you having other sides? i would defintely add a salad, some bread, and 2 veggie dishes.
I think you need more meat, but you could do something different for the kids, chicken cutlets maybe? i feel like 5 lbs roast does shrink once you cook it - i usually buy a 3 - 4 pound and that feeds 5 people.

Re: 22 people for Easter - Is this enough
I am having sides - vegetables, mashed potatoes, isreal cous cous. Also having apps. So far though I only have tempura for an app, need more ideas. I'm stressing. Dh thinks it enough and we always have tons of leftovers but I just don't believe I have enough. I need another entre, maybe a small ham?

Ham is always great because it's so easy.

Re: 22 people for Easter - Is this enough
I personally don't love lamb or ham. If there was nothing else I may have a small slice or skip it altogether and eat nothing but sides. I would probably go with chicken if I was going to do a second meat. As for appetizers, how about lentil dip with pita chips, italian meats/cheese and crackers, crudités, stuffed mushrooms, or shrimp cocktail.

Re: 22 people for Easter - Is this enough
You could do a big turkey breast and serve it at room temp.

for apps that are easy: veggies and dip chips with hummus / salsa cheese / cracker / italian meats platter fresh mozz and tomato spinach dip with bread bowl pigs n blanket or you can get one of those hors d'oevre platters with quiches and puff pastry items
if you are doing lamb and beef i think i would go with chicken if you are looking for another meat. you can do a roasted chicken (you can make it in a slow cooker if no room in the oven!!) or just chicken breasts (bone in) or chicken cutlets / chicken parm since you are doing a lasagna. both of those are easy to make beforehand and heat up.

Re: 22 people for Easter - Is this enough
That does not seem like enough at all. For thanksgiving we had that many people and 2 14 pound turkeys. The rule of thumb is to factor 1lb per person so that you have enough for seconds, large appetites and leftovers. Also, because the eat will cook down significantly.

I would add a big ham or a smaller ham and a turkey breast. Like a pp said the rule of thumb is 1 pound per person. Also that isn't a ton of sides to make up for the lack of meat. I would add a salad and maybe stuffing or do a big pasta like spaghetti or ziti. For apps chips and dip, veggies and dip, shrimp cocktail, stuffed tomatoes, stuffed mushrooms, ham rolls, deviled eggs, cocktail meatballs, spinach artichoke dip.

Re: 22 people for Easter - Is this enough
Thanks so much guys. I didn't think I had enough but Dh swore we would have enough. A turkey breast sounds awesome. My sil is coming over to make a rice casserole, she also mentioned penne a la vodka. I might do that as well - having another vegetarian option. I won't do the ham. The apps suggestions are great. Thanks. I now have a plan.
