Frosted Bonbons Prep Time:1 hr 40 min Start to Finish:2 hr 10 min Makes:6 dozen cookies Bonbons 3 cups Gold Medal® all-purpose flour 1 cup butter or margarine, softened 2/3 cup powdered sugar 1/4 cup milk 1 teaspoon vanilla 1 package (7- or 8-oz size) almond paste Vanilla Bonbon Frosting 1 cup powdered sugar 1 1/2 tablespoons milk 1 teaspoon vanilla Chocolate Bonbon Frosting 1 oz unsweetened baking chocolate, melted and cooled 1 cup powdered sugar 2 tablespoons milk 1 teaspoon vanilla Decoration Betty Crocker® sugar sequins or other decors
1. Heat oven to 375°F. In large bowl, beat all bonbon ingredients except almond paste with electric mixer on medium speed, or mix with spoon, until dough forms. 2. Cut almond paste into 1/4-inch slices; cut each slice into fourths. Shape 1-inch ball of dough around each piece of almond paste. Gently roll to form ball. Place about 1 inch apart on ungreased cookie sheet. 3. Bake 10 to 12 minutes or until set and bottom is golden brown. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes. 4. For vanilla frosting, in small bowl, stir all Vanilla Bonbon Frosting ingredients until smooth. 5. For chocolate frosting, in small bowl, stir all Chocolate Bonbon Frosting ingredients until smooth. If necessary, stir in additional milk, 1 teaspoon at a time, until soft enough to spread. 6. Dip tops of cookies into frostings and sprinkle with decors as desired.

I am attempting rainbow cookies this year
Rainbow Cookies
4 eggs 1 cup flour 1 cup sugar 1 teaspoon almond extract 1 cup melted butter food color
FOR TOPPING 6 oz chocolate chips 1 tablespoon oil
FILLING Jam - apricot, strawberry and raspberry are all very good but you can experiment (I bought black cherry conserve with amaretto the other day, it's go-od!)
Beat eggs until fluffy. Add sugar, then flour, melted butter and extract. Mix well. Divide into 3 bowls. Add green food color to one, red to another and leave the third plain. Turn into pans and bake at 350 for 10 minutes or until light brown.
Let cool. Put first layer on wax paper and spread with jam, then put plain layer on top of that and spread with jam. Lastly put red layer on (I like to trim edges at this point so it's all even)
Melt chocolate chips and oil. Spread chocolate on top of cake and refrigerate or freeze until chocolate is hard. Flip and spread chocolate on other side and refrigerate/freeze. When both sides are hard, cut into small pieces. (Hint: I cut width-wise strips and then turn strip onto its side to cut into smaller pieces, this way you're cutting through the cookie more than the chocolate - the chocolate has a tendency to crack.)
I made these this year and I doubled the recipe and used 9x13 pans. They came out good, but I overcooked the cake a bit, so make sure you watch them closely.
