this probably belongs on the recipe board, but I need quick ideas.

please post your easiest or most favorite meals to make.

Recipe for Oven Fried Chicken:


1/4 cup Progresso Plain Breadcrumbs, or similar product
1 tbsp grated Parmesan cheese
1 tsp paprika
1 tsp dried thyme
1/2 tsp garlic salt
1/4 tsp ground red pepper
1/3 cup buttermilk
20-oz uncooked chicken breast, boneless and skinless
1 serving cooking spray
1 tbsp margarine, melted

Preheat oven to 400ºF.

Combine first 6 ingredients in a shallow dish.

Place buttermilk in a separate shallow dish. Dip the chicken in the buttermilk and then dredge in bread-crumb mixture.

Place chicken in a jelly-roll pan coated with cooking spray.

Drizzle margarine over chicken.

Bake for 40 minutes or until cooked through.

Bella that sounds YUMMY! I assume one can use milk instead of buttermilk? (to keep it on the lighter side)

Yes, you can. I make this alot. You can even use it to make a sandwich. Very yummy!!!

Grilled Boneless Porkchops with Tatziki Salsa

i made this 2 nights ago- just make sure your husband eats it with you- because the garlic and onion is killer on the breath!


Pork Chops:
2 thick cut boneless pork chops
sea salt, pepper and olive oil

Tarziki Salsa:
1/2 cucumber, peeled and chopped
1/2 small red onion, chopped fine
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
2 cloves finely chopped garlic
2 tsp fresh lemon juice
1 tsp extra virgin olive oil
3/4 cup finely chopped parsley leaves


Brush pork chops with olive oil, and season heavlily with sea salt and pepper. Throw on the grill for 7-8 minutes per side.

While its grilling prepare the salsa buy combinig the ingredients. When the pork chops are done, put the salsa on top. You can also sprinkle crumbled feta cheese on top as well for garnish. Its quite salty so feel free to reduce the salt.

Here is one of mine… so fast and EASY and yummy too! I love meals that you can prepare using 1 pan!

1 lb ground beef (I use 87% lean)
Chopped onions
Mrs Dash original seasoning
Parsley
About 3/4 of a cup of Tomato sauce – use whatever kind you like
1 cup of Minute rice

Brown the ground beef in a pan (I use a sauté pan). Add onions, parsley and Mrs Dash seasoning. Once the beef is cooked though, drain the fat – that’s how I do it, but you don’t have to.
Add the tomato sauce (you may need to add some water if the sauce is thick)
Add the Minute Rice.
Mix it all up and let simmer for about 5 minutes.

Enjoy!

Melissa, this sounds very delicious. Unfortunately, DH does not eat pork so I guess Iwould have to make it for myself or when my girlfriends come over.

Easy Italian chicken

Let chicken breasts marinate in Italian dressing for 30 mins-1 hour (the longer you leave them in the better)

Preheat oven to 400 degrees

Spray a 9 X 13 baking dish with cooking spray

Remove chicken from marinade and coat with Italian bread crumbs. Lay chicken in baking dish.

Sprinkle with parmesean cheese and drizzle with cooking sherry (optional)

Cook chicken for 20-30 minutes, depending on thickness of breasts.

*For added flavor, cook chicken, remove from oven, sprinkle with shredded mozarella cheese and cook for 5 more minutes or until cheese melts.


I usually make this with some sort of pasta.

Chicken sausage marsala (one pan!)

INGREDIENTS:
1 (16 ounce) package whole wheat or low carb penne or bow tie pasta
1 pound chicken sausage
1/3 cup water
1 clove garlic, minced
1/2 large onion, sliced
1 medium green bell pepper, sliced
1 medium red bell pepper, sliced
1 tablespoon Marsala wine
1 can Italian-style diced tomatoes, undrained
1/4 tsp dried oregano
1/2 tsp black pepper

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.

Place whole sausages and 1/3 cup water in a skillet over medium-high heat. Cover, and cook 5 to 8 minutes. Drain and thinly slice. then return sausage to skillet.

Stir in garlic, onions, peppers, and Marsala wine. Cook over medium-high heat, stirring frequently, until sausage is cooked through. Stir in diced tomatoes, black pepper, and oregano. Cook about 2 minutes more, then remove from heat. Serve over cooked pasta.

I call it "Chicken A La Moi" AKA something I made one night and DH loved so I keep making them

I don't have an exact recipe but it goes like this:

Preheat the oven to 350
Clean the chicken breasts and cut off the nasty stuff
Dip the chicken breast in balsamic vinegar
Then drop it into a bowl of Italian Bread Crumbs
Put it in olive oil on the range thing for 2 mins..so it gets a nice brown color on the outside
Stick it in the oven for 20 mins or untill thouroughly cooked

Instructions
In a large skillet, cook beef and onion until meat is browned, about 10 minutes; drain off fat. Stir in undrained stewed tomatoes, tomato sauce, chili peppers, chili powder and cumin; bring to a boil.

Stir in uncooked macaroni and kidney beans. Return to a boil, reduce heat, cover and simmer until macaroni is tender, about 15 minutes.

2 medium scallion(s), chopped
2 medium garlic clove(s), minced

2 cup cooked white rice, kept hot


Instructions
In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.

Directions
In bowl, mix stuffing, can of tomatoes with juice, water and garlic cloves. Mix until moistened.
Spray Pam on bottom of 9x13 pan
Cut up chicken into bite sized cubes and scatter in pan.
Sprinkle chicken with dried basil, garlic powder, salt and pepper.
Top chicken with Mozzarella Cheese
Top with Stuffing Mixture

The Big Easy Bean and Veggie Burrito

Ingredients
1 tsp olive oil
1 small onion(s), chopped
1/2 package frozen mixed vegetables, thawed
1 Tbsp cilantro, chopped or 1 tsp dried cilantro
1/2 cup salsa
8 oz tortilla, flour, fat-free, about 4 burrito-size tortillas
1/2 cup shredded reduced-fat Mexican cheese
16 oz fat-free canned refried beans


Instructions
Heat olive oil in a large nonstick skillet until it sizzles.

Stir-fry onions, mixed vegetables and cilantro until crisp-tender, about 3 minutes. Remove from pan and set aside.

Spread about 1/4 cup of refried beans in middle of each tortilla. Sprinkle grated cheese over beans, then top with about 1/4 cup of the cooked vegetables.

Fold over each end of the burrito, then fold one side to the center over the filling; then fold up the other side (like an envelope).

Place one burrito on a plate and microwave at full power until cheese melts and beans are warm, about 2 minutes. It will take about 5 minutes to cook four burritos at once.

Top each burrito with 2 tablespoons salsa and serve.
