Yummy "cookies" I made . . .

I did not calculate points or anything, but I made these and they are so good and much healthier than other cookies or brownies. They actually have a brownie like consistancy. I made 18 large cookies, so this can easily be spread even further to make even more cookies of an average size.


Red Velvet Cake Mix
1 can of pumpkin (not the large can, the regular sized can)
1 cup semi sweet chocolate chips



Mix cake mix with pumpkin. When completely smooth, add chips.

scoop spoonfuls onto a lined (parchment paper) cookie sheet (keep in mind that these tend to puff up more than spread out, so generally the size of the scoop will be close to the size of the "cookie"

Bake following the directions on the box of cake mix for cupcakes.


These are moist, dense and delicious, and really much healthier than other baked goods.

I make that as a cake, or cupcakes. For 18 cupcakes, it is 2 pts. each without the chocolate chips, so to be on the safe side, i would say they are 2 pts. per cookie, plus whatever the chocolate chips are. They ARE good!

stupid question. With the cake mix, do you add the eggs, water, oil that it would suggest? or do you actually just do cake mix and pumpkin?

Just mix the pumpkin and the mix, no eggs or oil. If it seems a little too dry, I put a smidge of water in too.

No not the super large can, the regular soup sized can.

I didn't, and I looked pretty carefully. I also remember looking for it after that Apprentice task where they made the red velvet ice cream Chat Icon and I could not find it then either!

Oh, and I calculated the points- I just went back to WW online and I am trying to be more disciplined. If you end up with 18 cookies, they are 2 points each. The pumpkin adds a good amount of fiber and of course there is a lot less fat. That is also with 60 chocolate chips in the mix.

I made them....and If I did not do them myself, I'd never believe that they were just cake mix and pumpkin, and a few chips. SO FREAKING GOOD! We ate the whole batch in 2 days!
