red wine should never be chilled. it should always be room temperture
but i have heard of a few ppeople who prefer it chilled for some reason.

as well as ports...
not sure about shiraz...
some reds are even heated up

Some red wines can be chilled.
When we bought our wine fridge we learned this. Our fridge has two different temp controls one for white and one for red.

Pindars Sweet Scarlet is one of the few reds i drink and i too like it cold..
i also like all my wines cold....but i am pretty much a white wine drinker
Spice wines are heated up and they are YUMMY

Moe.....i think it is a personal preference..
I do see people, not huge wine drinkers, that chill their wine...
But most red wines are usually served at room temp
if you liked it chilled....go for it

According to the KISS Wine book I have it states on page 150 " Red wines are best NOT at the traditional room temperature - the phrase was coined before central heating became common - but somewhat cooler."
"Light red wines with little tannin can also benefit from a brief time in the refridgerator - perhaps twent minutes or half an hour."

So then if you have CAC then you should be ok?

Yes, I also learned this while visiting Napa last summer. Personally, I prefer my red wines chilled, and I keep them in my wine refridgerator at the red wine setting. The reds I drink most are shiraz, zinfandel, and beaujoulais. Drink it how you like it!

Not sure but the book taught me
"If wine is served to warm it becomes too volatile and you get lots of alcohol vapors coming off. It will taste soupy and won't show at its best....If its served too cold it will not be volatile enough, and will taste dumb and hard. Red wines served too cold taste unapproachable and harsh. BUT wine will warm up in the glass. What it won't do is cool down."

I prefer most of my reds chilled a bit too and keep mine at the same setting as you.

I have chilled chianti, merlot and montepulciano. I have heard you shouldn't chill it, but if I have an open bottle, I prefer to put it in the fridge to store it and not keep it on the counter. Plus, I agree with what Deb wrote - sometimes the reds can be too warm.
I am no wine expert, if I like it chilled, I'll drink it that way. I am not hurting anybody.
