a la Vodka sauce
I have tried Rachael Ray's recipe and DH didn't love it. Does anyone have a different recipe they can share?

I just did my own tonight. Keep in mind, I don't use exact measurements. I melt 1.5 tablespoons butter in a deep frying pan, then saute 1 clove of garlic. Add 1 tbsp. flour to thicken. I then add sauce from a jar....maybe 1/2 to 3/4 cup. Add Parmesan cheese to taste. I let that thicken and just start to sizzle a little bit and add heavy cream, just until the color is right, kind of a dark pinkish orange. Then I do vodka once around the pan (can you tell I get my measurements at least from Rachel Ray?) and basically just let it simmer while I get everything else done (drain pasta, get garlic bread out of the oven, etc.)
Once the pasta is tossed, I dump the pasta into the pan w/ the sauce (why get it all over 2 pots), toss and sprinkle again with Parmesan.
I know this isn't a very exact recipe, and I'm sorry, but I was just told it was the best I'd ever made it, so I figured I'd share.

I am sorry, I can't remember who posted this originally, I had copied it and use it all the time. It's delicious. I also add some grated cheese.
1 1/2 cup tomato sauce 1/4 lb. Pancetta or Prociutto, chopped finely (this is a little expensive and really not nessecary. you can leave it out.. I usually do!) 1/2 cup heavy (whipping) cream 1/3 cup vodka 1/4 cup butter 2 to 3 cloves chopped garlic 1 small red onion, chopped small
1lb. penne or rigatoni
Melt butter in a large skillet. When butter is hot add pancetta or Prociutto, garlic and onion. Saute over medium heat. Add vodka and stir until vodka is reduced by evaporation. Add tomato sauce and stir heavy cream and season with salt and black pepper. Simmer, uncovered for approximately 8-10 minutes.
Prepare Pasta in large pot of salted water. Add penne or rigatoni and cook pasta until desired doneness. Drain pasta and add to skillet with sauce. Toss pasta and sauce over medium heat until the sauce coats the pasta.
Optional or alternate taste: Pinch of red pepper flakes added during saute.
4-6 servings.

I use this one all the time and I love it! I hated the Rachel Ray one, it was too watery.

My family had an italian restaurant in brooklyn for years and they were known for their vodka sauce... Ive made it many times and its delicious...
1 small onion chopped fine 1 stick butter 1 can Tuttorusso crushed tomatoes 1/8lb prosciutto-diced s&p 1/4 c vodka 1 sm container heavy cream 1 lb penne pasta
in a frying pan large enougn to hold all ingredients, saute onion in butter until transparent,add prosciutto saute 2 minutes,add tomatoes, s&p, simmer 20 minutes, in a slow bubbling sauce,add the vodka slowly and let it simmer about 5 min over med heat, then add the heavy cream-enough to make it a light red color, pour sauce over penne & add lots of grated pecorino romano cheese -- enjoy!

I do eXACTLY THIS EXCEPT ADD GARLIC IN WITH THE ONION, AB0OUT 6 CLOVES DICED. WE LOVE GARLIC

1 1/4- 1 1/2 cups heavy cream depending on you cream preference. 1 cup parmesean Crushed tomatoes 1 lb. 10 oz can (I do half puree, half diced) 1 onion. medium size fresh basil, chopped, 1/4 cup olive oil 1/2 cup vodka 5 or 6 cloves garlic, minced Prociutto ham (3-4 slices) diced
saute onion, basil and garlic and ham until onion is soft.
add vodka keep covered and
boil for 10 mins. it smells funny, so watch out...
Add tomatoes, 1/2 teaspoon salt 2 tsp sugar. simmer 20-30 mins covered.
Add cream, simmer 20-30 mins covered.
Add ¾ cup cheese towards the end.
Spread on cooked penne. this pot of sauce is good for 1 lb. pasta and then some. sprinkle rest of cheese on for garnish.

4tbl butter 2tbls minced shallots 1/2 pound prosciutto- finely grounded- in the food processor. 1/3-1/2 cup vodka 2pints heavy cream 1 can tuttorosso tomato puree
melt the butter on med heat add shallots and mix until slightly brown. add prosciutto and brown for 10 mins, still on med heat.
add the vodka and stir, then carefully ignite with a match or lighter- stir until flame dies out. if flame continues for more than two minutes blow it out. add the heavy cream and tomatoe puree. lower heat to low and simmer for 30 minutes stirring occasionally.
makes 2lbs of pasta.
the best recipe so far!

My friend gave me this recipe. Personally, it's way to garlic-y for me and I cut back on it. Put overall it's really delicious and makes a lot!
1 C diced red onion 1 oz vodka 2oz olive oil 2 med. garlic cloves, chopped (my friend used almost all of a small jar of chopped garlic) 4 oz butter (1 stick) 1 1/2 C heavy cream (1 pt) 1 1/2 C crushed tomatoes (one big can works) 1 C parmesan (the more the better)
1 lb rigatoni
Heat olive oil in large saute pan. Add red onion and garlic. When garlic turns ligth brown, remove from burner. Add vodka and return to burner. Add tomatoes, heavy cream, butter and parmesan cheese. Heat until all melts and stir frequently. Pour over pasta.
