We did an all-inclusive at the Sonesta on St. Maarten for a long weekend with friends. Loved it.
We also did a 6 day trip to Riviera Maya, Mexico, last year. We did not stay at an adults only resort (although there was one in the "compound") but we did see more than 5 kids the whole week we were there.

We stayed at LeBlanc Cancun and really loved it
