Alternative to Hamburgers?
I just defrosted 2 pounds of chopped meat. DH hates meatloaf and I'm sick of Hamburgers. Any suggestions as to what to do with it?

Hmmmm..Sloppy Joe's is a good idea! DH is a child anyway
Lat time I made meatloaf, I put it in a pie plate and sprinkled cheese on it. He didn't know the difference, but I don't think he would fall for it again

I'm making Mexican lasagna this week! DH LOVES it - he practically inhales it! If I had the recipe on me, I'd post it. Here's one that's very similar though (you can halve it since you only have 2 lbs of meat and you don't need to feed 24 people! ):
Lasagna Mexicana
4 lbs ground beef 2 cups chopped onion 2 cups chopped celery 3 ¾ cups green chili salsa 2 ½ cups mild enchilada sauce 6 oz tomato paste 1 cup black olives, sliced 1 TBS salt 1/8 tsp pepper 24 corn tortillas 6 cups shredded cheddar cheese 3 cups cottage cheese 4 eggs, slightly beaten
Cook ground beef, onion and celery until beef is browned. Drain. Stir in tomatoes and green chilies, enchilada sauce, tomato paste, black olives, salt and pepper. Heat to boiling. Lower heat, simmer uncovered 20 minutes, stirring occasionally.
Tear tortillas into bite-sized pieces. Combine 4 cups cheddar cheese, cottage cheese and eggs. Spread 1/3 of meat mixture on bottom of 12x20x2 pan. Top with half of cheese mixture, then half of torn tortillas. Repeat layers, ending with meat mixture. Sprinkle remaining 2 cups cheese over top.
Bake at 375 for 30-45 minutes, until bubbly around edges. Let stand 15 minutes before serving. Serves 24.

Beef Fajita Burgers: 1 Onion 1/2 container of button mushrooms Cheddar cheese for top 1 1/3 pounds ground sirloin 2 tbs Worcestershire sauce, eyeball it 1-1/2 tsp chili powder 1 tsp ground cumin 2 to 3 tbs fresh picked thyme leaves, several sprigs (I didn;t use this) Several drops hot sauce 1-1/2 tsp grill seasoning (recommended: Montreal Steak Seasoning by McCormick) Extra-virgin olive oil, for drizzling
Combine sirloin, Worcestershire, spices, thyme, hot sauce and grill seasoning. Grate 1/4 onion into mix. Mark meat into 4 sections and make 4 patties, 1-inch thick. Drizzle extra-virgin olive oil on the patties. Cook patties 4 minutes on each side for medium or, until desired doneness. Add cheddar cheese once you flip burgers if desired.
Slice rest of onion and all the mushrooms Sautee and top burgers with it.

And my mother used to make this when we were kids...
Beef & Noodles: brown ground beef in large fry pan strain the grease return meat to pan add: one can of tomato sauce, one can of beef gravy, some salt, pepper & a pinch of oregano. Mix well. Turn heat on low until the sauce is hot.
Cook egg noodles per package instructions, drain and add to the fry pan mix & serve.
I haven't had it in a while but it was yummy!

Picadillo - it's a cuban dish.
Ingredients: 1 lb chopped meat 1 medium onion, diced 1 green pepper 3-4 cloves of garlic, chopped 2 small cans tomato sauce 2 tbsp olive oil garlic and onion powder oregano
Heat oil in frying pan over medium heat. Add chopped garlic and lightly brown. Add peppers and onion and cook until just soft. Add chopped meat and brown thoroughly. Mix all together in pan. Add 1 1/2 cans of tomato sauce to meat and mix in. Sprinkle onion and garlic powder and oregano. Cover pan and reduce heat. Cook approximately 20-25 minutes, stirring occasionally.
I serve it over white rice. My sister and brother in law make beans with it too, but DH and I dont like beans. It's one of my favorite meals!

Meatsauce maybe... or sweet and sour meatballs, take plain tomato sauce and jelly cranberry sauce (equal parts) and melt together , take meat and add some bread crumbs and egg, and put into sauce mixture and let cook about an hour, tastes better of it sits a few hours. Serve with rice or noodles , yum!
Or try , ground beef, minced onion, bread crumbs, some salt and pepper, and crushed garlic , and a drop of water, combine into croquettes and bake or fry. serve with patatoes.

Jac...I was going to say picadillo!! WE love it and it's so filling! We always have leftovers! I also cut up potatoes and throw those in also (my stepmom taught me that)

something I do is fry up the meat like you would if your making sloppy joe at the same time I make some egg noodles and heat up some of that franco american gravy and just mix it all together.

How about Swedish Meatballs?
Make them as you were making italian meatballs but instead use regular flavored bread crumbs. I brown the meatballs and I cheat by buying a can of cream of mushrooms and pour them over the meatballs. I boil wide noodles and pour meatballs on top. So Yummy!!!
