Amazing stuffed poblanos recipe!
We saw some gorgeous poblanos at the farmer's market last week and I made this recipe tonight Easy and so yummy!
I modified it a bit, this is the link to the blog I got the recipe from.
Stuffed Poblano Peppers
6 small/medium sized poblano peppers Extra virgin olive oil 1 shallot or 1/2 diced onion 2 cloves garlic, minced 3 links sweet italian sausage 1 cup salsa (I used roasted tomato chipotle, you can use your fave) 1/2 tsp. ground cumin 1/4 cup crumbled goat cheese Salt and pepper 2 oz. mild cheddar cheese, shredded
1. Preheat the oven to 400.
2. Heat a drizzle of olive oil over medium heat, and saute the shallot until tender. Add the garlic, and cook for an additional minute. Crumble in the sausage, and cook until the sausage starts to brown. Add the salsa and cumin. Season with salt and pepper, and simmer over low for a few minutes. Add the goat cheese and stir.
3. Cut just the tops off the peppers, and then cut a slit down one side. Pry the slit apart, and remove all of the seeds.
4. Stuff the sausage mixture into the peppers. Top each pepper with some of the cheddar cheese.
5. Bake until the poblano is tender and browned around the edges (25-30 minutes in my oven).
I served this with spanish style rice and jalapeno cheddar corn bread - it was a huge hit!

That sounds really good.
How spicy are poblanos? If a green pepper was a 0 and a jalepeno was a 10...
Could you use another type - maybe those yellow banana or regular red/yellow/green peppers?

I am very, very sensitive to spicy foods - mild salsa can sometimes be spicy for me
That being said, roasting the peppers in the oven makes them very mild and sweet and takes away their spiciness (I didn't try it raw but I did put my hand to my mouth after cutting them and it was hot!)
On a scale of 0 to 10, after being cooked, I'd give them a 3. Maybe a 4. And you could totally use a regular green pepper, just make more of the filling (or use 4 peppers instead of 6).
Another good, sweeter alternative, but with a similar shape, would be a cubanelle (sometimes called Italian peppers, they are pale green and long).
