another christmas dessert question

i'm toying with an idea...

one of the cookies pictured in the cookie thread has a chocolate ganache on top. yum.

i'd like to do something similar with caramel.
does anyone have a caramel recipe that will solidify the way chocolate does? i would like it to not be tacky to the touch. or is this wishful thinking?

i'm off to google something while i wait for an email that's holding me up at work. Chat Icon

What if you did the ganache recipe but substituted butterscotch or toffee chips?

I have a blondie recipe that utilizes both that gets the taste you are probably going for. Or close to it.

Sure! Got it from a magazine a million years ago. It's very easy.

1 stick butter, softened
1 cup sugar*
2 eggs
1 tablespoon vanilla
1 cup flour
1 tsp salt
combo of butterscotch and toffee chips - I don't measure but about half a 12 oz bag total.

Oven to 350.

Mix together the first four ingredients, beating in the eggs one at a time. Beat for a good 2 minutes for fluffiness.

Stir in the last three ingredients more gently. Bake in an 8x8 or 9x9 greased pan for 28-30 minutes. (It has varied depending on the oven I've had.)

*The recipe called for white sugar but I've always wanted to try half white half brown. The only reason I don't is because there are a couple of people in my family who love them so much that I never feel like experimenting with it. But I love brown sugar so I should one day.
