Another disney question - character dining
If I wanted to do just one meal with the characters which one would you recommend?

It depends...
If you have a child SUPER into Princesses then the Akerhus Breakfast in Norway at Epcot has everything you could ever want. They have 5 princesses on any given day and you get a free 8x10 pic with one of them...plus they all come to your table.
If you have a child really into Tigger and Pooh, then Crystal Palace is definitely the way to go!!! They have a parade every ten minutes and they all come to your table.
Chef Mickey will satisfy your need for Mickey, Minnie, Goofy, etc.

I probably missed this, but where are you staying?
A lot of the hotels have character breakfasts if you are staying on grounds.
Doesn't cost anything extra and they are great about going around table to table.

How far in advance do you have to book them? & how do you go about booking them? Depending on where you want your character dining. Some places are a year in advance (according to my insane Disney fanatic mother). But, I think realistically you can get a reservation within a few months of your trip. But, the earlier the better. You can just call the Disney number on the website and tell them when you are coming and when you'd like to go. They will make the reservation.
Another suggestion I have is to have lunch (dinner is WAY more expensive) in the castle if at all possible. My mom and dad took DH and I when I was 5 months pregnant and it was something I had never done before. If you have a little girl, it is perfect b/c all of the princesses walking table to table and take pics/sign autographs. It was a lot of fun.
I've also had breakfast at Chef Mickey which was a lot of fun as well. You get all of the characters there. They play music and all the characters dance around.

Re: Another disney question - character dining
It is usually 180 days out (you can book starting 180 days out and on that day for the rest of your trip - up to 10 days) I think there is a new system in place now and not sure if is up and running for a short period of time they are only taking ressies for dates up to a certain days (less than 180) not sure if that is over with or not (check out -allearsnet.com)
Some character dining ADRs go quicker than others. There is a whole system of how to call to get cinderella's castle - which you need to call at like 7am 180's out to get it. Akershus is easier to get - but I hear booking early too. Chef Mickey's fill quickly too. Crystal Palace is easier to get (we got sat lunch there 2 days before when we were down there).
I would say if you want a specific day or meal I would try to call 180 out and try to book it right away to make sure you get what is most important to you.
If your DC loves princesses I would say breakfast or lunch at Cinderella's table (dinner is just the fairy godmother) or a meal at Akershus.
For Mickey - Chef mickey is great (you get mickey, pluto, minnie and donald).
1900 park faire is supposed to be good - that is mary poppins and friends (I think a princess, pooh - but they change the characters on this one I have heard). I have heard that sometimes this one though has some villans (the scary step sisters and step mother).
Garden Grill has mickey and friends.
Ohana has a breakfast with Lilo and Stitch and Mickey I think is there too

We are doing all of these. I rather do all character dinning and get pics there they try and chase them down in the parks
We have 30 people with us so we did it 180 days in advance. The day we could, we did.

We are going in January and not staying at a disney resort. Maybe I'll look into chef mickey since it seems like there are alot of characters there.

If you have a little girl who is into princesses, I would do either Cinderella Castle, Akershus, or 1900 Park Fare. I think the best all around character meal is Chef Mickey's though. Have fun!!!
