Another holiday for me to make COOKIES...
...for my students. Some of you may remember the turkey cookies for Thanksgiving and the holiday cookies for Christmas and Chanukah. For Valentine's Day, I hereby present the cookies and gift bags I made for my students and my assistants. Do you think I made enough?

Just wait til St. Patrick's Day! Great, now my fingers will look green. All of the red food coloring makes it look as if my fingers are bleeding!
I only have 8 students since I teach Special Ed. The others are for random friends and co-workers so it wasn't a big deal to write. I really needed a smaller writing tip!

I had a system. On one afternoon, I made 4 double recipes of butter cookies. I had the bowls lined up - 4 bowls of dry ingredients (flour and baking powder), 4 cups of liquid ingredients (orange juice and vanilla) and 4 bowls of the butter, eggs and sugar. Then I just pulled out my MONDO KITCHEN AID 6 QUART MIXER and went BAM BAM BAM BAM. I froze all of the dough as I didn't know when I would do the baking. Martha Stewart says you can freeze cookie dough for three months (leading me to believe, I should just make dough and stock up now for March.) I ended up baking them the next day even though the dough only needs to sit a coupe of hours to harden so you can roll it.
The frosting was easy - just milk, powdered sugar, vanilla and butter.
You can get the recipe for the whole thing at landolakes.com and look for the recipe call "Best Ever Butter Cookie". They have a million different types of butter cookies, but that is the one I always make!
Essentially, it was a three day project, but it doesn't need to be - I just made 8 recipes so it took that long.
