Any good recipes for a diabetic who also has high cholesterol?
A friend of ours had a heart attack and I'd like to invite him and his GF over for dinner but have no idea what to make except plain chicken and plain rice.
I have made this before and it's delicious - do you think it's OK - or b/c of the honey and butter is it no good?
1/4 cup butter, melted 1/4 cup orange juice 1/4 cup honey 1/2 teaspoon salt 1 broiler/fryer chicken (3 to 4 pounds), cut up (I bought the Perdue pack already cut up)
In a shallow bowl, combine the butter, orange juice, honey and salt. Remove 1/3 cup and set aside for basting. Dip chicken pieces in remaining butter mixture; place in a well-greased 13-in. x 9-in. baking dish. (I used a 9x13 Pyrex and didn't grease it).
Bake, uncovered, at 350° for 1 hour or until juices run clear, basting occasionally with reserved butter mixture.

I think it would depend on how strict his diet is now. A friend of mine uses recipes from this site HTH.

I think it's fine. I am insulin resistant and both my parents were diabetic. The sugary glaze will be spread across an entire chicken so I don't think it will be bad at all. Plus - if the chicken is skin on he will probably remove most of the skin (and thus the glaze) before eating since he has the cholesterol issue.
I really wanted to say that I want to try the recipe! It sounds delicious! Maybe this week! Thanks!
