Cheesy Spaghetti Squash
1 large spaghetti squash (3 lb.) 2 Tbsp. KRAFT Reduced Fat Parmesan Style Grated Topping 1/2 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese 2 plum tomatoes, finely chopped 1/4 cup chopped fresh parsley
PIERCE squash several times with fork or sharp knife. Microwave on HIGH 10 min. or just until softened, turning over after 5 min. Let stand 5 min.
CUT squash in half; remove and discard seeds. Use fork to scrape insides of squash to form strands; place in bowl. Add remaining ingredients; toss lightly. Spoon into one of the squash shells; discard remaining squash shell.
MICROWAVE on HIGH 2 min. or until heated through.
An alternative to using the microwave is to bake the squash, cut side down, for half an hour at 350.

i cut it in half. then i take the seeds out . tirn it upside down in a glass pan & add water about 1/2 way up the squash. i microwave it about 10 min & then check to see if the skin is soft , continue to do this until it is
take it out & use a fork to get the squash out like spaghetti. add butter & some grating cheese. Its delish .
you can also do it by adding butter & lil nutmeg & cinnamon. its sweeter but good as well i love spaghetti squash

I tried this last week...so good, but I couldn't wait the 20 minutes and ate it anyway!
* 1 spaghetti squash * 1 head garlic * salt * pepper * olive oil * vegetable oil * vegetables or meat or cheese
Directions: Preheat oven to 350-375 Halve raw spaghetti squash with a sturdy sharp knife, scoop out, and discard the squash poop with a spoon Place halves onto an oven safe cooking dish face up. Clean head of garlic and thinly slice garlic, (the larger pieces of garlic brown nicely, and offer a wonderful layer of complexity to the dish). Spread garlic into the bowl like shape of the squash, salt and pepper vigorously, drizzle with a 50/50 mixture of olive oil, and vegetable oil (get the oil everywhere inside the squash). Place onto the upper middle rack of the oven for about 30-40 minutes. (You will know it is ready when the squash separates with little resistance from the skin). Remove from oven, and place in coldest location possible for at least 20 minutes, before separating from skin Use a fork to scoop and separate squash strands, add any other ingredients you like at this point. Parmesan, Romano, or Pecorino, Feta, are all excellent additions to this dish, as well as, meat, sausage, veggies, olives, the list is endless.

I made this for the first time this weekend, and it came out great! I saw it on Lidia. Just cut the squash in half.. removed seeds, and threw in frying pan. Cut a ripe green pear in cubes and sauteed.

Just made.. cut in half long way and scoop out seeds. on cut side, salt & pepper and olive oil! place in pan cut-side down and roast at 425 degrees for about 30 - 40 minutes until you can stick a knife in easily. Once done let cool off- use a fork and shred squash into a bowl. Meanwhile- in a pan melt 1/4 stick of butter and 2 tablespoons of olive oiil. sautee in oil/butter 1 clove of sliced garlic and 1 shallot. Once opaque- toss in 1 tablespoon fresh chopped sage and 1 tablespoon fresh parsley. Then add squash and toss w/ herb mixture and serve.

I haven't made it in several years since DH doesn't like squash at all but when I did make it, it was so easy.
I prepared the squash according to the directions on the sticker that is on it. After baking, I removed the squash in the strands and put into a casserole dish. I poured a can of crushed tomatoes on top and then covered with parmesan and baked. It was so easy, and low in fat/calories. Delicious too. I wish DH would eat it!!

same cooking method but I just dress it with butter and fresh chives.

Spaghetti Squash is so versatile.
I've microwaved it and placed it in the oven. The microwave is so much easier.
You can use your favorite spaghetti sauce recipe. I make homemade turkey meatballs or shrimp and toss it in.
You can also do a chili topped with cheddar cheese.
Or
just with garlic and oil and other veggies.
Love it!

Italian Turkey and Spaghetti Squash Pie WW POINTS® Value: 3 Servings: 6 Preparation Time: 18 min Cooking Time: 60 min Level of Difficulty: Moderate Cooked spaghetti squash makes an excellent substitute for regular pasta. If you don't have time to bake the squash, cook it in the microwave.
Ingredients 1 medium raw spaghetti squash 1/2 pound(s) lean ground turkey 2 tsp olive oil 1 small onion(s), chopped 1 medium garlic clove(s), minced 29 oz canned diced tomatoes, undrained 1 tsp Italian seasoning, or more to taste 6 oz fat-free ricotta cheese 1 large egg(s) 1 spray(s) cooking spray, nonstick 1/2 cup(s) shredded fat-free mozzarella cheese Instructions Preheat oven to 350ºF. Halve squash lengthwise; scoop out seeds. Place squash, cut sides down, in a large baking dish and prick skin all over with a fork. Bake until tender, about 30 to 40 minutes.
Meanwhile, cook turkey, stirring occasionally, in a nonstick skillet over medium-high heat until browned, about 5 minutes. Drain, remove from skillet and set aside.
In a same skillet, heat oil over medium-high heat. Add onion and garlic; saute until onion is tender, about 5 minutes. Stir in tomatoes and Italian seasoning; bring to a boil. Reduce heat; add cooked turkey and simmer, stirring often, until desired consistency, about 5 minutes.
Place ricotta and egg in a food processor or blender; puree until smooth.
Coat a 9-inch glass pie plate with cooking spray. Remove squash from oven and increase oven temperature to 375ºF.
Using a fork, carefully rake stringy squash pulp from shell, separating it into strands that look like spaghetti. Arrange spaghetti squash strands in bottom and up sides of pie plate to form a crust.
Add ricotta cheese mixture and gently spread over squash. Pour tomato-turkey sauce over cheese mixture and sprinkle with mozzarella. Bake for 20 minutes. Remove from oven and let stand 5 minutes before slicing into 6 pieces. Yields 1 piece per serving.
