I'm bored with the stuff I usually make with them so I'm looking for ideas. TIA!

Re: any suggestions for chicken breasts?
I just made chicken marsala with onions and melted mozzarel on top, it was yummy.
I seasoned the chicken with salt pepper, a little paprika, garlic powder.
In a pan I heated up oil and cooked the chicken and placed it in a baking dish.
I sliced one medium onion and in the same pan I used to cook the chicken I melted a good amount of butter and cooked the onions until soft. I poured one cup of marsala wine and let it reduce 1/2 way.
I poured it over the chicken and put the shredded cheese ontop, covered with aluminum and baked for 25 mins.
Served it with rice and wedge salad.
Soooo good, DH loved it/

Re: any suggestions for chicken breasts?
we tried one of the recipes in a cookbook I had, sort of like a greek salad without the lettuce. It is grilled chicken, bell pepper, cucumber, tomato, feta, chopped red onion, parsley, minced garlic, red wine vinegar and olive oil. Cut chicken, pepper, cucumber, tomato into small bite size pieces. Serve with whole wheat pita.
It was really good and healthy.
