Anybody have good Polish recipes?
Yesterday my sister and I were out and about, starving, and wanted something other than the typical fast food take out we normally get.
We decided to stop at one of the Polish delis in my town and we got pierogies, kielbasa and sauerkraut and stuffed cabbage.
Now, I know I can't make it as good as the natives, but I am sure some of you have some great recipes. Doesn't have to be for these specific items either.
Do share!!

This was so good to hear!
I can definitely get you recipes for pierogies, stuffed cabbage and kielbasa and sauerkraut from my mom. It's all pretty simple to make!
We usually make our pierogies filled with sauerkraut, but I have also made them filled with prune butter, and I know potato is very popular.
As for kielbasa, for breakfast we usually have kielbasa and eggs. Slice up the kielbasa, cook it in the frying pan then mix it with eggs.
They also have sliced kielbasa (like a cold cut) that we have also fried and put on a roll, hero, toast, with butter.
I know. Very unhealthy. LOL. But so good.
I can post the other recipes tonight.

Stuffed Cabbage
Ingredients: 1 Large head of cabbage (About 4-5 lbs) 1 1/2 to 2 pounds of chuck chopped meat 2 Eggs Salt and Pepper 1 Cup of cooked rice 4 Cans of Condensed Tomato Soup 4 Cans of Water 1 Cup of Ketchup
How to cook cabbage: 1. Take the head of cabbage and put in a pot and bring it to a boil, letting it cook halfway, approximately 20 to 25 minutes.
2. Drain the cabbage and let it cool.
How to put together meat mixture: 1. Take the chuck chopped and mix it with the 2 eggs, salt and pepper to taste and the cup of cooked rice.
Once the meat is mixed and the cabbage is cool, separate the cabbage leaves and put about the size of a meatball of meat in the center and wrap it. Line each stuffed cabbage in a large pot.
After all the stuffed cabbages are in the pot, add the 4 cans of condensed tomato soup, 4 cans of water and the cup of ketchup.
Cover and let this come to a boil. Once it boils, lower the heat to a simmer and mix carefully until done which is about an hour to an hour and a half.
We usually serve the stuffed cabbage with mashed potatos and use the sauce in the pot as the gravy.

Polish Pierogies - usually we serve this as a side to a main dish. Or you can have it by itself.
Ingredients: 3 cups of flour 2 eggs 1/2 teaspoon of salt 1 Cup of water Pepper Margarine Large Can of Sauerkraut 1/2 large onion or 1 small onion
First, cook the sauerkraut: 1. Open the can of sauerkraut and empty it into a calendar to drain the liquid. 2. Wash the sauerkraut with cold water to get the sourness out, for about a minute. 3. Slice the onion and put that into a frying pan with the margarine. 4. Add sauerkraut to the pan with the onions and margarine. 5. Continue turning the sauerkraut in the pan, adding margarine as needed so it doesn't burn. 6. You can add pepper to the mixture, if desired. 7. Once the sauerkraut is nice and brown it is done. 8. Put this on the side to cool.
To make the dough: 1. Take 3 cups of flour, 2 eggs, half a teaspoon of salt and one cup of water and mix dough until it rolls into a ball. 2. If it's too wet, add more flour. 3. If it's too dry, add some water. 4. Roll out the dough 5. Take a large glass or cup to cut the dough (like you would with a cookie cutter) into round pieces.
Prior to adding the sauerkraut to the dough and making the actual pierogie, take a large pot of water and bring it to a boil.
Now, while the water is boiling, you will make the pierogies: 1. Take a teaspoon or tablespoon of the cooked sauerkraut mixture, and place it in the center of the dough and pinch the dough together. If the dough won't stick, stick your fingers in water and this should help. 2. Place the pierogie carefully into the pot of boiling water. I usually place it on a large serving spoon and gently place it into the pot. 3. When the pierogie floats to the top, it is done. Take it out of the pot and place it on a plate to cool off. 4. You can put multiple pieorgies into the water at the same time.
When you are ready to serve the pierogies, you brown them lightly in a frying pan with margarine.
Note: You can also substitute the sauerkraut mixture and use mashed potatoes, or even prune butter.

I have yet to make homemade Pierogies myself....but there's a Polish deli that sell them and gets them fresh from the Polish neighborhood in Bklyn. I usually melt some butter on the stove top and saute red onion in the butter and then toss the pierogies in the pan and brown. They are soooo delish. I steam the sausage and serve. I like them crispy so I take a small portion and then slice on the angle and toss in the butter/onions after the pierogies are done to brown. Serve with ketchup & sour cream mmmmmm

I love homemade pierogies. My family gave me her family recipe and they are awesome! We make them with kielbasa on the side. We cook diced onions in butter make them nice and soft, add in the pierogies and cook till golden. Then we eat them with sour cream and syrup. YUM!

Thanks for posting this! I always just eye balled the recipe for pierogi like my grandmother, but I'm going to try this recipe out. We always made the filling out of boiled then mashed potatoes, butter, salt and pepper with cheddar cheese cubes melted in.

Do you want my duck blood soup recipe? Of all the old old family recipes my grandmother COULD have given me she gave me this. Chanina which isn't the spelling but I guess it could be worse I could have got Tripe lol.
