Anyone doing a farm share?

I've never made or eaten swiss chard before, but I got a great recipe from the farm's website I wanted to share. I made it without the anchovies, and next time I will double the onions & add more garlic. Chat Icon

Pasta with Caramelized Onion, Swiss Chard and Garlicky Bread Crumbs


3 tablespoons butter or olive oil

5 anchovy fillets

2 garlic cloves, finely chopped

2/3 cup bread crumbs

1 tablespoon extra virgin olive oil, plus additional for drizzling

1 yellow onion, halved from stem to root and thinly sliced crosswise

Kosher salt and pepper

1 pound Swiss chard, ribs removed, leaves chopped

1/2 pound whole-wheat pasta, such as fusilli.


1. In a large skillet over medium heat, melt the butter. Add 3 anchovies to the skillet; cook until melted, about 2 minutes. Add the garlic and cook 1 minute. Stir in the bread crumbs and toast until golden, 3 to 4 minutes. Transfer to a bowl.

2. Wipe the skillet clean and return it to a medium-high heat. Add the oil, the onion and a pinch of salt. Cook, stirring occasionally, until very soft and caramelized, 15 to 20 minutes. Chop the remaining 2 anchovies and add them to the skillet. Cook until melted. Add the Swiss chard, a handful at a time, and cook until wilted, about 4 minutes. Cover and keep warm.

3. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain well. Toss with the chard mixture and bread crumbs, season with salt and pepper and drizzle with oil.

I got this recipe from a farm share I did a few years ago. Maybe not the healthiest but definitely the best dish I ever made with chard!

Croquettes (for spinach, chard, kale, collards, arugula or watercress)

Salt and black pepper to taste
2 lb fresh greens, large stems removed
1 medium onion, roughly chopped
2 eggs, lightly beaten
1/2 c grated cheese, such as Gruyere, Swiss, Cheddar, Parmesan, etc.
1/2 c bread crumbs
2 Tbsp olive oil
2 Tbsp butter or more oil

Bring large pot of water to boil and add salt. Add the greens and onion and cook for just about 1 minute, until the greens wilt. Drain thoroughly and cool a bit. Chop the greens and put it and the onion in a large bowl along with the eggs, cheese and bread crumbs. Mix well, then add salt and pepper. If the mixture is too loose to form into patties, add some more bread crumbs; if it's too dry, add a little milk or another egg.

Put half the oil and butter into a large skillet, preferably nonstick, over medium heat. Form the spinach mixture into small patties (this amount will make 8-12). Put half the patties into the hot pan and cook for five minutes on each side --- until nicely browned. Remove from pan and drain on paper towels. Add remaining oil and butter to pan and cook the rest of the patties. Serve hot or at room temperature.

Yes, I'm splitting a share with a friend thru Golden Earthworm. So far I LOVE it, but it's a lot of food for me!

Yes, I'm splitting a share with a friend thru Golden Earthworm. So far I LOVE it, but it's a lot of food for me!



We split the Golden Earthworm with my BIL/SIL too (have for 4 years now) and LOVE it, though there are often things I don't know how to cook/don't want to cook...so I give them all to SIL, since she loves to cook. Chat Icon

I do and I love it. I gets a full share but there are 4 of us and I make just about everything.
When I make Swiss chard I usually add some reduced balsamic vinegar and it's delicious.
