Here you go, Melbernai gets all the credit. It is so yummy, I make it into mini loafs and freeze them.

My "Delicious Pumpkin Bread"

Makes 3 medium loaves -- freeze well or give as gifts/bring to thanksgiving and fall parties.

3 1/4 c. all purpose flour
2 teaspoons baking soda
1 teaspoon ground nutmeg
2 cups solid pack pumpkin puree
1 cup veg oil (I use canola)
1/2 cup chopped walnuts (optional or you can use raisins -- or both)
1 1/2 teaspoons salt
3 cups white sugar
2/3 cups water
4 eggs.

grease and flour 3 7X3 inch pans. preheat oven to 350.

Mix dry ingredients first, fold in wet ingredients

bake for approx 1 hour or until cake tester/wooden stick comes out clean!

thats just about the same recipe i use and it always goes over well, although i use a lil cinn.
