Anyone have a good quiche recipe?
I'm going to search for one as well but thought I'd try here first. I want it to be moist but not too wet. TIA!

This is the recipe I use, it doesn't call for cheese but you certainly can add some
Spinach Quiche Ingredients: 10 oz package frozen spinach 1 small onion minced 2 tbsp butter 2 tbsp flour 1tsp salt 1/4 tsp pepper 1/4 teaspoon nutmeg 2 large eggs 1 cup of light cream 2 tbsp paremsan cheese 9” pastry shell
Directions: -Sautee onions in butter -Add spinach (thaw part way in microwave and drain first) -Mix in flour and seasoning -Remove from heat -Beat eggs, cream, cheese together -Add frying pan contents to egg mixture -Mix in empty pie shell -Cook 35 minutes at 400 degrees on a cookie sheet

I just made this last night and it was delicious. I used cheddar cheese instead of mozzarella. The vegetables i used were red and green peppers, spinach, onion and tomatoes.
Asparagus-Zucchini Frittata
Makes: 8 servings Prep: 30 minutes Bake: 35 minutes
Ingredients
Nonstick cooking spray 12 ounces fresh asparagus or one 9- or 10-ounce package frozen cut asparagus 1 small yellow sweet pepper, cut into 1/4-inch-wide strips 1/2 of a small zucchini, halved lengthwise and cut into 1/4-inch-thick slices (about 1/2 cup) 1/3 cup chopped onion 1/4 cup chopped bottled roasted red sweet peppers, drained 1/2 cup shredded reduced-fat mozzarella cheese (2 ounces) 2 cups refrigerated or frozen egg product, thawed, or 8 eggs 1/2 cup fat-free milk 1 tablespoon snipped fresh dill or 1 teaspoon dried dillweed 3/4 teaspoon salt 1/4 to 1/2 teaspoon ground black pepper 2 tablespoons all-purpose flour 3 to 4 tablespoons finely shredded Parmesan cheese Fresh dill sprigs (optional) Directions
1. Preheat oven to 350 degrees F. Lightly coat a 2-quart rectangular baking dish with nonstick cooking spray; set aside. 2. If using fresh asparagus, snap off and discard woody bases. If desired, scrape off scales. Cut into 1-inch-long pieces. 3. In a large saucepan, bring about 1 inch water to boiling. Add asparagus, yellow sweet pepper strips, zucchini, and onion. Return just to boiling; reduce heat slightly. Cover and boil about 5 minutes or until crisp-tender. Drain well. Stir in roasted red sweet peppers. Spread asparagus-pepper mixture evenly in baking dish. Sprinkle with half of the mozzarella cheese. 4. In a large bowl, whisk together egg product, milk, snipped or dried dill, salt, and black pepper until well mixed. Whisk in flour, making sure it is completely combined. Pour over vegetables in baking dish. Bake, uncovered, about 35 minutes or until slightly puffed and top shakes set. Sprinkle with remaining mozzarella cheese and Parmesan cheese. Let stand for 10 minutes before serving. If desired, garnish individual servings with dill sprigs

I like this recipe as a crust-less quiche
1 tablespoon vegetable oil 1 onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 5 eggs, beaten 3 cups shredded Muenster cheese 1/4 teaspoon salt 1/8 teaspoon ground black pepper
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
and the recipe is great for a Deep Dish quiche!
1/2 pound thick sliced bacon 1 (10 ounce) package frozen chopped spinach, thawed 1 (8 ounce) container sour cream salt and pepper to taste 2 (9 inch) unbaked deep dish pie crusts 2 tablespoons olive oil 1 onion, finely diced 1/2 pound fresh mushrooms, finely diced 2 cups finely diced smoked ham 8 ounces Monterey Jack cheese, shredded 8 ounces Cheddar cheese, shredded 4 ounces Parmesan cheese, grated 8 eggs 1 1/2 cups half-and-half cream 1 tablespoon dried parsley salt and pepper to taste
DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Cook spinach according to package instructions. Allow to cool, then squeeze dry. Heat olive oil in skillet over medium heat. Saute onions until soft and translucent. Stir in mushrooms, and cook for 2 minutes, or until soft. Stir in ham and cooked bacon. Remove from heat. In a large bowl, combine spinach, sour cream, salt and pepper. Divide, and spread into deep dish pie crusts. Layer with bacon mixture. Mix together Monterey Jack, Cheddar and Parmesan, and sprinkle over pies. Whisk together eggs, half-and-half and parsley. Season with salt and pepper, and pour over pies. Place pies on baking sheet, and bake on middle shelf in preheated oven for 40 minutes. The top will be puffed and golden brown. Remove from oven, and let stand for 5 to 10 minutes.
