I have a recipe for a good quiche base.
I've never tried it with broccoli but perhaps blanche some broccoli and then fry it with the onions and spread it in your pie shell and pour the base over it. You can take the bacon out, I never make it with bacon only mushrooms. I haven't made it in a while, but I think you may have extra and it might not all fit in the pan. If you want another cheese I guess you could substitute it.
1 pie shortcrust shell ready made or buy those puff pastry shells and put it in a glass pie dish 2 tbsp olive oil 1 onion diced 4 slices bacon (use ham, I got it from an Australian cook book and they dont have bacon like the US has, it is like ham) 6 medium eggs 8 oz. cream salt and pepper 2 tbsp parsley 4 oz parmigiano
Preheat oven to 350.
heat frypan over medium heat and add oil and onions and cook for 4-5 mins until onions soften. Add bacon and cook for 3-4 mins. remove from heat and let cool.
beat eggs with cream, s&p, parsley and cheese. spoon onion and bacon mix into shell and pour egg mix over onion and bacon mix. Cook for 30 mins until golden and set in middle. if it gets golden and isnt set throw some aluminium foil over it.
For mushroom: add 6-7 oz of chopped mushrooms to pan while cooking onions. Cook for 5-6 mins until mushrooms are softened. For those that cant eat pork, cut pork out of the mushroom recipe.
good light quiche, not too rich.

I got this recipe from a poster on this site. (sorry I can't remember who). It's crust-less & soooo easy. This recipe calls for onion, spinach and munster cheese but i've used asparagus, mushroom, onion, whatever veg I have on hand. Use whatever cheese you want too. I use a little less than this recipe calls for. I actually think 2 cups is plenty.
Crust-less quiche
1 tablespoon vegetable oil 1 onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 5 eggs, beaten 3 cups shredded Muenster cheese 1/4 teaspoon salt 1/8 teaspoon ground black pepper
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
** Basically all you need are the 5 eggs (I add a splash of milk) and add whatever veg & cheese you like.

This is the recipe I use. I either make chicken and broccoli (using cheddar cheese, i just precook chicken) or bacon (precook bacon). Always comes out so good. No need to precook the broccoli (and I don't usually use the green onions in it).
