1/4 cup olive oil 2lbs beef chuck steak cut into small chunks (fat removed) 1 medium onion chopped 3 garlic cloves chopped 1 small green pepper diced 1 28oz can whole tomatoes with juice 1 6oz can tomato paste 2 16oz cans red kidney beans drained 1 16oz can low salt beef broth 1/4 cup chili powder 1 tbsp cider vinegar 1 tbsp ground cumin 1tsp salt 1 tsp oregano 1tsp basil 1 tsp fresh ground pepper 1 bay leaf 2 tsp cayenne pepper 3 whole dried chilis In a heavy pot heat oil and sear beef quickly. Drain off fat. Set beef aside. In same pot saute onions and garlic until tender (do not brown garlic) Stir in remaining ingredients except for beans and cook for 1 hour and 15 minutes with cover on. Sitr occasionally add beans and simmer additional 20 minutes.

I use this mix
I follow the recipe in the mix package, then i add small red beans, green peppers, olives, a can or 2 of diced tomatos and serve it over rice
Its says 2 alarm but when you add all the other things I listed above it calms it down a little

i have one i'm making tonight! its in the first rachel ray 30 minute meals book.... 1 pound ground beef 1 onion choped up 3-4 cloves of chopped garlic 1/2 bottle of beer (or just add extra broth) 1/2 cup of beef broth 1 can crushed tomatoes 2-3 tablespoons chili powder 1 tablespoon cumin
in a big frying pan, brown beef all the way through, add in onion and garlic and cook till onion is soft... then add in spices and beer and broth and tomatoes.... and just let it simmer
