Re: Anyone have a really good guacamole recipe?
3 Haas avocados, halved, seeded and peeled 1 lime, juiced 1/2 teaspoon kosher salt 1/2 teaspoon ground cumin 1/2 teaspoon cayenne 1/2 medium onion, diced 2 Roma tomatoes, seeded and diced 1 tablespoon chopped cilantro 1 clove garlic, minced
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

Thank you. I am always confused about the ripeness of the avacado. Any tips?

Re: Anyone have a really good guacamole recipe?
I don't want to toot my own horn but I've been told I make a mean guac. lol
Here's the recipe, add or subtract as needed.
2 Haas avacados 1/2 tomato 1/2 spanish onion 1/2 lime 4 leaves of cilantro salt
Cut the avacados in half and remove pit. Cut lines through the avacado across and up down, into cubes. Squeeze the avacado into a bowl. Dice 1/2 of a large spanish/white onion and add to bowl. Mash the avacado and onion together. Take 4 leaves of cilantro and cut into tiny TINY pieces, add to bowl and mix. Cut 1/2 of a large tomato and mix (DON'T MASH) into bowl. Cut lime in 1/2 and slice inside up and across and squeeze lime juice into bowl. Add salt to taste.
In order to keep the guac fresh longer add one of the avacado pits to the bowl and seal it while in the refrigerator. Also when picking the avacados make sure they aren't TOO soft or TOO hard. I always buy a lot more than I need to make sure I get at least two good ones.

When you press them, the skin should give SLIGHTLY. Not squishy, not hard.
Here's my recipe:
3 avacados, cubed a container of cherry/grape tomatoes, cut in half size pieces 1/4 bunch cilantro, chopped 1 small red onion, chopped lemon juice to taste (I like a lot) s-p to taste
mix and serve. I like to keep all the pieces relativtly the same size.
