ANYONE in phase 1 of south beach?

Please let me know what you guys eat as far as snacks go..

I'm in Phase 1! Chat Icon

My snacks are usually:

- Sugar free/Fat free Jello pudding snacks - 60 calories and they come in great new flavors like Dulce de Leche (so good!), chocolate mint, and mochaccino.**

- Garlic pickles - only 5 calories each. Lots of sodium though, so I make sure I drink plenty of water on those days.

- Pistachios (up to 30/day) and almonds (up to 15/day)

- Reduced fat peanut butter and celery or jicama

- No sugar added fudgsicles**

- Polly-o string cheese

- Polly-o part skim ricotta with various extracts and/or unsweetened cocoa powder. One good recipe is for pumpkin ricotta - add Splenda, vanilla extract, nutmeg and cinnamon

- I also make something I call "cheesy bakes" -- take a bowl full of shredded reduced-fat cheddar and add a little onion powder and garlic powder. Put pinches of the cheese mixtures onto a non-stick cookie sheet and bake at 400 for 6 minutes. They come out like crispy cheese chips. You can eat them plain or dip in salsa, guacamole or sour cream Chat Icon


**For the sugar-free snacks and fudgsicles, you're supposed to limit your intake to 75 calories a day

- Peanut Butter or Hummus on celery
- Homemade Dried Chickpeas (really good)
- Ricotta Creme, which is in the book
sometimes I make it with Pumpkin Pie seasonings

I also make the yummiest dessert - I call it homemade ice cream.

I melt a fudgesicle off the stick (mic. for 15 seconds) Cut it up in a bowl. add cool whip and the serving of peanut butter and mix together. Stick in the freezer and it's the best peanut butter cup ice cream ever.

If you ate your nut serving already, just leave it out - it's like a Milky Way.

Thank you all so much..i am going crazy...I NEED SNACKS. I tomake the ricotta cream I am going to buy the sugarfree popsicals and the penut butter..

I bought the book and i signed up on line. I think Phase 1 is the hardest but I have been following pretty good..my husband is doing it with me and at night we are both like..what can we eat..we need to munch on something..i guess thats what got us in this in the 1st place

I have the books - the regular one, the cookbook and the "companion guide" for what foods to avoid. I don't think the companion guide is great though and some of the info conflicts with what's in the book.

In case you need a breakfast recipe, here is one for waffles (Phase 1!) that I really love:

2 large eggs
1/4 cup Polly-O Part-Skim Ricotta Cheese
1 tsp Granular Splenda or 1 regular packet, more or less to taste
1/2 tsp Baking Powder
Cinnamon to taste

Just mix everything together, then pour into a waffle iron. Set the iron to the highest level so they come out a little crispy.

I also like to add 1/4 tsp of imitation banana extract and 1/4 tsp of vanilla extract. I think next time I might add a few pecans for a banana/pecan waffle Chat Icon

I would also tell you that once you go to Phase 2, start w/ 1 carb a day.
From my own experience he has you going to too many carbs right away and all of a sudden you are eating these things and eating too much bread.

I would say start w/ an apple or strawberries or something low in carbs to reintroduce them in your system.

Small apple & PB so you are getting you nut serving & carb in 1 and you don't crash.

I have done SB a few times and am having alot of success right now. I am also on an online board like this one and everyone is awesome. I am in a group of ppl who started Phase1 at the same time so we are all intouch or post questions about food or products. It's great b/c there are ppl who lost like 100 lbs on the program.

Plus recipes too.
Any questions, let me know -
I think you can also eat the Turkey Pepperoni from Hormel on Phase 1 too. It's sooo good.
You can make Tortilla Pizza on Phase 2 with it.

I can go on and on about SB b/c for me it's a great program, but more of a way of eating that give me energy too. I don't worry about portion control and it's easy to find something to eat at any restaurant!

That's a really good point. I think that's been my downfall everytime I switch from Phase 1 to Phase 2.
